I made this today as I was making a quiche ( from the same website) and it required a prebaked pie crust. Turned out perfect ! Thanks Stephanie !

Mixers? Food processors? For mixing pie crust? Very simple way to do this, get a plastic bowl with tight fitting lid. Put your 3 cups of flour, 8 oz of butter, and three tablespoons of hot water. Put all in bowl and shake vigorously until mixed. Makes two pie crust quick and easy. Also, you don't get your mixer of food processor all mucked up with the lard and . My granny who passed away at 100 taught me this and it works. No lard necessary in this easy recipe.

I enjoyed seeing the weights. Beans are really cheep and reusable (as weights), so thanks for the tip. This crust I'm baking now is turning out much better than the first one I did so many thanks for all of the partial and pre-baking instructions.

Yes, the method of pre baking the tart shell can be used with other types of pastry. I used shortening, although you could use lard.

Yes, you can use it for either sweet or savory pies/tarts. Whether you pre bake the crust usually depends on the recipe.

I always make it either in a food processor or I make it by hand. I've never actually tried making it with a hand mixer.

Hi Stephanie.........this was just excellent. I was looking at some of the comments directly below........ Perhaps the flour is an issue. I know that for me, I always use Robin Hood Unbleached flour. I have always had very good luck with my crusts, and perhaps the folks below are using something different than what you've used. Thanks for doing this for viewers; also just watched your coconut cream pie recipe which I will try very soon.

When you put the pastry into your pie pan make sure to really press it into the corners. Yet don't pull the pastry when you're doing this as it will cause shrinkage. Then chill it before baking so it gives the pastry time to relax which also helps reduce shrinking. And really fill the shell with pie weights (rice, beans) so that the sides have enough support so they won't fall (shrink) during baking.

Can you just make any pie/quiche with it? Isn't there any chance you bake it too long when you make a pie with it? love your videos!

I've had it sometimes where I pre-bake my pie crust and the pie crust starts to collapse on the sides, do you have any suggestions on remedies for that? or possibly know why that happens? I may have my pie crusts not going high up enough on the sides, but I thought they went up to the top of the pie tin.

Nice video. Very detailed explanations, which leave nothing to chance (or your own fumbling mind). Say that one does not own a food processor can one use a blender instead?

I've never made it with whole wheat flour. You could try making it with an equal amount of whole wheat flour.

I watched your prebaked pie crust recipe. The question is if my prebaked pie crust is totally baked, then when I will fill it with the chicken and cheese filling and cover it with another top layer of crust, then wont the down layer that is prebaked start to over bake or burn because it is already fully baked? please tell me the time to keep in oven AFTER the chicken filling and layering the top crust layer.please help me.

You can replace the shortening with an equal amount of butter.

Its a SOLID form of vegetable or animal fats, like Trex... and its white. Its not butter.

You can leave it at room temperature overnight or chill it in the refrigerator.

I am making a custard pie. I am still unsure should I prebake my crust or not because the custard pie recipe I use bakes the pie for about 50 minutes and I am scared it will get too brown or the crust won't be done but the filling will be. Should I prebake or not? thank

I'm looking for the answer to the same question, except for a pecan pie. My crust is always nice and flaky on the edge and sides and the bottom is waxy. Have you tried prebaking for custard since.

Hi Stephanie! Do we bake the pie crust again once the temp of the oven is reduced to 375f? Or do we put it back in the oven at 425f and then reduce the temp to 375f while the pie crust is in the oven ?

You don’t have to wait until the temperature is 375F before putting the crust back in the oven.

Dear stephene How to make light pastry. Secondly u have added sugar in a pie crust I want salty quiche should I avoid sugar? After quiche is baked blind, and we fill custard with filling how much to bake so that rawness is not there from outer side as well as inside of piecrust. Thanks Rims1

You can use regular salt, I just prefer the flavor of kosher salt.

Excellent. I have this extra wet apple-pie filling (I grate the apples, then mix em with lemon-brandy and cinamon) that tastes very good. I only need to keep the pastry from soaking up that juice. This will work really well. I'm gona try it soon.

I have tried this twice & each time the crust failed. First tried a processor then by hand. I guess I don't have the touch to make pie crust!

Unfortunately, I've never made a chicken pot pie with a bottom crust, just a top crust. So I really don't know. A lot has to do with how long the filling needs to be baked. Another option you could try is to just partially bake the bottom crust, if you are worried about it burning.

nana zezo You need some kind of weights to hold the paper down so the crust doesn't puff up. I normally use rice or beans but you can buy pie weights.

Am I the only one that didn't hear the temp of the oven for the first bake? She said to reduce it to 375 for the second, but I didn't hear the temp for the first. Any ideas what it was?

Bake to 425 for 15 minutes then reduce to 375 and bake for another 10 minutes.
