Attempting Russian Piping Tips!

This is my first try attempting russian piping tips! I got a set as a present a while back and started noticing all the pretty cakes and cupcakes decorated using them. Buttercream flowers are a favorite decoration motif of mine but I had always made mine from scratch using various petal tips.
Full recipe: preppykitchen.com/russian-pip...
Here's a link to the set I'm using: amzn.to/2F5tiZO
These are jumbo tips that allow you to pipe complex shapes in one pass. There are many different types of tips that create roses, tulips, daisies, swirls, abstract shapes and large sets of petals among other things. Because the tips are so large you can more easily add different colors of buttercream to the bag to create multicolor flowers and shapes. I used Swiss Meringue buttercream for this but you can totally do this with an American buttercream. Just make sure it's nice and creamy.

I’ve found the easiest way to fill the piping bags (for this Russian tips process) with the multiple colors is to lay out Press and Seal by Glad on the counter. Spread out the outer color on it. Then put the other in the center. Roll it up around the inner color. Twist both ends of the Press and Seal. Snip one end and then just drop it in your piping bag with the tip. It makes clean up a breeze and it doesn’t get all over your hands. Hope those directions make sense. Love your videos.

These bring me back to Russia circa 90s. Instead of cupcakes, these tips were used to decorate Flower Basket sugar tartlets. Lined with jam, topped with a heaping swirl of Italian meringue and decorated with mousseline cream flowers around the perimeter, they were everyone's favourite. Always first to sell out, if any were available after 3 pm, it was a guarantee a new baker made a mistake and used plain buttercream all around.

The tartlets sound lovely. As a newbie in pastry, your comment sent me on an online educational detour into different types of pastry creams. Thank you!

a tip might be to pop the buttercream in the fridge for a bit before you start piping so it’s a bit more stiff and then the buttercream will soften up again afterwards :)

Your decorative icing talents are truly admirable. How about using them to create buttercream succulents of the botanical kind? Hens and Chickens, Aloes, Jade plants; the varieties are endless. (And occur in endless color variations.) I've never seen this done before, but I'd love to see you pull it off.

I always did a softer buttercream by heating it up. This made it easier to manage and pipe out with a much smoother look. At work we used a torch and hit the side of the mixing bowl while it was whipping. At home, an alcohol lamp is better than a candle, perhaps a heating gun if you don't want open flames... No black streaks from the wax. For sharper colors, I sometimes like to load the bag with another bag fitted with an eclair tip as you can get several different colors that way. I also like to use just the tiniest spot of dye and touch the inside of the edges with gel color using a toothpick. You get the streaked effect that way. great vids!

I bought a set about 6 months ago. When you get the hang of it, they are indeed amazing! You, of course, learned a damned sight faster than I did! They look amazing! I bought the ball tips you mentioned as well. The ball tips really made short work of 6 dozen cupcakes for a wedding shower. I got a three-way coupler to use with them, so the frosting was a beautiful tri-color. I did use a soft American buttercream for all. Great video!
