The recipe for canning mushrooms on the National Center for Home Food Preservation website (linked below) has you boiling mushrooms prior to canning them. This results in a lovely mushroom broth that I think you should can up as well! What a great way to get two awesome products from one harvest!

Love mushrooms, this video is great Heather. I really do love how you kept the broth and canned it too. That broth can totally serve another purpose especially in something you wouldn't want as much liquid in for when using the mushroom pieces. I could totally see the broth being a base for a heartty soup or even a yummy mushroom sauce/gravy in/on a meat roast. Thanks for sharing the process! 💚💚

We grow mushrooms as well for our family. Lions mane, king trumpets, shitake, miatake, chestnuts, enoki, wine saps, yellow oysters, blue oysters, pink oysters, white oysters and reishi. We have morells and chanterells growing around the property for the 1st year. We spread the mycelium around for them. We freeze dry what we can't get to fresh. I have canned them as well. You are right, that broth should not be wasted. 👍

I'm so excited about doing the same with our own mushrooms REAL soon, so your video could not have been better timed to help motivate me once our mushrooms are ready to pick. They grow so quickly after pinning, it really is a good idea to be ready to do something with them before they're ready... My first harvest will be Pearl Oysters, so we'll see if we have enough to can after we make a meal with them. I'm hoping we can freeze them if we don't have enough in one flush to keep them fresh & still be able to can them later.

I have been canning mushrooms and broth for a few years. Love the flavors, I use the broth when I cook roasts. I really want to get into growing mushrooms. Is there a book you would recommend for reference to this.
@SageandStoneHomestead
@SageandStoneHomestead Ай бұрын
Yes I have a book that so far I've only skimmed but it covers a lot, from simple to advanced techniques in growing mushrooms at home. "The Essential Guide to Cultivating Mushrooms" by Stephen Russell. So far we have been buying blocks that are ready to grow from Druidry Farms and that's been a nice introduction to growing mushrooms for me!
