Getting a steak in a restaurant with the sauce slapped over the steak NEVER EVER looked good. Why hide the main feature on the plate? That is home dining while watching the rugby.

Wallace looks hungover as hell on this one! Amazing to see how the standards have improved over the years. These guys wouldnt even compete in the amateur show.

I always use a kitchen shears to spatchcock a chicken. I'm not sure I could do a clean job of it w/ a knife.

I get fucking up the lemon curd, thats a very technical thing, you dont have stuff pre-measured, are doing it by hand and eye, have to do it quickly, have to not let their eyes off it. Lots of ways to fuck it up. But the spatchcock chicken thing is kinda weird to me. It's as easy as taking out the back bone, then turning it over and pressing it flat (gently) against the counter. It's an old technique and it originated from the Isles (most likely Ireland) so them not knowing what to do as professional chefs is off.

Stress and pressure have a very wide range of side effects on people. This isn't a complex concept - much like you made the spatchcock chicken sound. Surprised you didn't know this one, too, genius.

Back to basic traditional ways would do chefs no harm .every older country chef could do these simple preparation tasks. Arty farty doesn't mean better quality food

20:26 That's simply one of the most hideous dishes I've seen; I'd have straight sent that back if my local cafeteria put that in front of me and I live in one of London's poorest districts. If you're gonna use an _Omelette_ to place in front of a Michelin Chef, at least make sure it's nice Golden-yellow and and oozing cheese in the middle to retain it's moisture. To put _that_ in front of Mr Roux takes balls of Superman & then some. Crazy. Sadly for him,, this is not a Titanium Ball competition.

I would have thought that an organization the size of yours would take the time to provide accurate subtitles. The auto-generator is absolutely lost on this dialogue. Just have someone go through the automatic ones & fix them! With the proper setup I could do a whole series in half a day. (Gimme a job LOL) So, you've made yourselves look very unprofessional, which is rich with irony on a show as dedicated to perfection as this one. I've just started watching S2, and it really is a good show. That bream challenge was genius! Too bad about the subtitles.

Justin's dish is the most bizarre thing I've ever heard of. None of it goes together. I can't believe he calls himself a chef. I think it was just his nerves and he doesn't have what it takes to compete at this level. I'm sure if he was home cooking for his family or friends. He'd be great.

Did they actually get a recipe for a piece of beef and a bearnaise sauce? My, how times have changed. 80% of the amateurs on these shows today can probably do that without the recipe.

Probably not. My age group, yes. My oldest children, maybe. My youngest children, probably not. The grandchildren; I doubt they've even heard of it....., and they all cook. However, any of them aged 7 and up could have spatchcocked a chicken better than most of them

Russell - my goodness. Hes living in dreamland if he thinks hes going to acheive anything other than mediocrity in some hotel chain like premier inn or nandos. That is an absolute fact & id love someone to prove me wrong by providing the evidence that this absolute tosspot can cook 🤷🤷.

6:25 then give them 5 minutes more, for crying out loud!! Seriously, I love this show, but the time they give them is absolutely stupid and castrating as they're not professionals! In a real restaurant, they would probably complete the task in an acceptable period. I think this is quite arrogant from those chefs. The show isn't about them, it's about the contestants' efficiency. And efficiency must be given a certain latitude. It doesn't have to be much. Just a little more. It seems as the chefs/ judges just want to make sure the contestants aren't as good as them. Well, they are not. They know they are not. We know they are not. It's a sign of arrogance or humbleness to showcase one's knowledge. Do the chefs really need to display their egos like that?
