They are definitely telling the delivery people to say “30 minutes” so the time limit is set up but it’s still enjoyable.

No, that's just how delivery works. I've worked at many places that deliver and the answer to "how long?" is always 30 mins.

I think especially since everyone's on lockdown, we're missing that "chefs hanging out in the background to pop in and make comments or give advice" feel that BA used to have.

Having an expert coaching the cooking process doesn't feel like BA. It's different, yet not sure where a lot of these videos are going. Having true "foodies" overseeing the boardroom process would shift these videos back to some normalcy

I think with the editing, there is no defining boundary between the section of the video, so it feels like a constant stream. There is no time to breath.

took me a little bit to start watching the new chefs but theyre personalities are absolutely incredible. good on BA for actually taking steps to correct what they have done wrong in the past. Chrissy, Harold , DeVonn, Melissa, Lana, Samantha, Susan, & whoever I'm missing have more than shown why they deserve to be on display. Keep on being amazing yall!

Search "Jackfruit recipes" on KZfaq or a search engine. There are several of them. The "Raw Boy" now "Neto Craves" has several on his KZfaq channel.

Vietnamese here, we don’t jackfruit into banh mi, at least I’ve never seen anyone do it before in any restaurant (and never add soy sauce to mit, it’s so weird). The most common ingredient (meat part) put giò (condensed steamed pork) or fried meat (chả) inside, but you can put anything in the banh mi to your liking ^^

@@Max-hf3ku I’m not necessarily saying that it must be meat, this is a vegan substitute for those who can’t eat meat. You can choose whatever filling you like (again), I’m not forcing anyone to do anything. People here just never use this combo and there are many vegan substitutes other than than jackfruit + soy sauce to be used as the filling for Banh Mi.

Opening tins sideways like that leaves LITERALLY 100% sharp edges. The lip of the can is shaped to open without leaving a sharp edge with the opener held vertically. A can opened with the opener held sideways can be used as a weapon in a pinch.

Looks amazing! The only tiny thing I would suggest is to cut the cucumber like the pickled daikon and carrot into sticks of the same size, but maybe that is just what I am used to in a traditional bahn mi. Maybe the circles give an interesting textural difference. I am super interested to try jackfruit; good tip!

Next time, microwave the vinegar, sugar, s&p and then pour it over the daikon/carrots in a mason jar. Close it and let it steam until you're ready to garnish. Less watching over a boiling pot. Also, use a mandolin or pastry cutter to julienne the daikon/carrots next time.

@@tess764 Sambal Oelek is the sauce in a condensed sriracha bottle. Typically it has shrimp paste inside but the one she has "Huy Fong Foods" one does not contain shrimp

Traditional South East Asian sambal does not contain shrimp but it's always a good idea to take a look at an ingredient list if you're buying something unfamiliar. The particular one used in this video does not contain shrimp.

Not here, it never should have shrimp in it if it's traditional. Granted I live in the Netherlands and we have loads of Indonesians here, so quite a few of Indonesians started food companies here. Granted if you are allergic or vegan it's always good to check (regardless of processed food).

the issue is rarely cooking time cuz at least that's the fun part and your nose ends up talking to your stomach as you cook. The issue is always the clean up.

I like that so far they haven’t insulted the takeout they’ve gotten. Like sure making something fresh yourself and taking on take out can be inspiring to try but they acknowledge that the food is good for what it is and that take out has it’s place. Food for delivery isn’t just a convenience it’s essential for some people. People who don’t have full kitchens, people short on money or time, people who for whatever reasons physically can’t cook for themselves. Genius idea. Also like sometimes I get take out more than I should because I have no idea how to make something and this could make it a lot less scary to at least try. P.S. 💛’s for Chrissy. P.P.S I got to the end of the video where she bites the sandwiches I upped my brightness and finally noticed how awesome her hair looks.

Something most Banh Mi recipes miss is the emphasis on lard (or a fatty mayo) and pate, glad to see it was included here as those two elements are far more iconic of a Banh Mi than Maggi seasoning. Lots of places use Maggi of course, but it just isn't Banh Mi without the lard and pate aspects which are balanced out by the pickled veggies.

It's not lard. There's no pork. It's made by continuously beating oil into egg yolks. Basically mayo but without the acidity.

Just a reminder to everyone coming in to throw hate: BA is a big company owned by an even bigger company--theyre not gonna be hurt by you throwing hate at the vids However, these chefs that are hired on to be video creators will be hurt and possibly lose their jobs if BA video production goes under cause dumbasses wanna hold a grudge at department's management that isn't even in charge anymore

@@LyonTheGreat A valid criticism to be sure, and one I do agree with--its definitely not the same.. but a lot of people coming out to throw hate are still just doing it cause they're holding a grudge at what old BA mgmt did (which they should be angry at those people for, but these are not those people)

@@edoardonardin8612 No - if the issue of Bon Appetit (misplaced for Conde Nast) hate was their treatment of POC, then screwing over POC does not help. In fact it does pretty much the same thing Conde Nast did. And plenty of posters have openly stated they don't care if POC get hurt in their little war against BA.

Feels like kinda an unfair challenge. Like she said, the restaurants have stuff pre-made; stuff is already pickled, the pâté is probably already done, and I wouldn’t be surprised if the meats/meat substitutes are done as well... I’m sure if she had the same prep as a restaurant, she would’ve been fine. (I do question what professions chef can’t properly pronounce mise en place or pâté though.)

True but that’s what makes it challenging. If all she had to do was assemble it would make for a pretty boring video. And they’ve done worse to Claire and Chris in the past so I think she’s fine. Plus she pulled it off

I don't get the point of this concept: Why would a pro chef have a problem making a Banh Mi sandwich faster than another pro chef making a Banh Mi if the first chef have the advantage of 20-25 minutes more time?

@@johnchoi2060 the woke crowd asked BA to pay their existing BIPOC crew properly. They didn't, so they quit. They then replaced em with other BIPOC for the sake of diversity (when they were quite diverse already). Are they paying them well? Don't know yet . There's nothing wrong with these new presenters but they're trying to get that lightning in a bottle they started with, but the broken trust makes it hard.

@@YenSnipest there is a lot that’s happened, but basically, a lot of the OGs left because it was revealed that Sohla, Priya, and Rick weren’t getting paid fairly. I say “a lot of the OGs” because I know it was publicly why Claire, Carla, Gaby, and Molly left after those three did. Have to assume Chaey did too. Not 100% on Stanek or Delaney

I really enjoyed this video. Before the transition of this channel I was an avid BA watcher, and was sad to hear about the discriminatory actions that occurred, but I know that they are really trying to make the company a better and healthier place. I was worried by the beginning videos at first, (didnt enjoy them) but this is the best one I have seen!! Thanks for listening to our opinions about the videos ;)

if they were trying to make the company a better and healthier place, they would have made the changes necessary to keep their old chefs. They're finding new people to take advantage of, that's all

@@CasperInkyMagoo the people who were doing the discrimination towards the employees are gone (fired). Which obviously was the greatest thing they could do. It’s hard to hold BA fully accountable, because the people running it now are all new, so they did nothing wrong. It’s rapaport who should be apologizing.

@@sofiarowley6176 when the chefs say "we will leave unless you pay us fairly" and then they are forced out... I think you can assume they have not made any substantial changes. I get benefit of the doubt and glass half full and all that but this is common sense. BA is a corporation.

Whenever someone mispronounces a word, I see it as a sign that they potentially taught it to themselves through reading or that the person speaks more than one language. I don’t think anyone should be elitist about individuals educating themselves through reading.

Her pronunciation of Baguette, especially when she said Baguette maybe 4-5 times in the span of 5 seconds distracted me. She said it like Bag-get like she carries this thing on her shoulder.

@@svenislegend I don't think young jackfruit has much of a flavor. Ripe jackfruit is very sweet and softer. Edit: I'm thinking maybe we don't know about young jackfruit because we're not vegetarians?

BA has lost its unique edge on other “quick casual” food channels. Would recommend editing out the cutting technique, hand in a blender, and whole timer thing. Really makes an otherwise great and creative chef look unprofessional and sloppy.
