When you are overwhelmed with fresh tomatoes, just throw them right into the freezer whole and deal with them later! Really! At the end of our bumper crop of tomatoes this summer, we were so overwhelmed with everything that needed to be accomplished, that we "took a risk" and threw our extra tomatoes in the freezer whole. I have a hand juicer that does the same thing, separates the juice from the pulp. Got that from a thrift store too.

I have been freezing tomatoes for more than 20 years. To shorten your work time even more use the tomatoes right from your freezer. I double bag the tomatoes, lable the bags with date and use the oldest first. When making chili or spagette sauce etc. just take a tomatoe and hold it under warm to hot water for about 10 -15 seconds and the skins slide off. Then core the stem from the tomatoe and toss the frozen tomatoe into your chili or whatever your cooking. The taste of the tomatoe is so fresh like in the finished meal. Good luck.

This is just what I do, but i stem, quarter and vacuum seal them. Skins slip right off and u can cook with or process fresh tasting tomatoes whenever. Plus they last forever when vacuum sealed.

A funny story years ago my wife and I processed tomatoes like you have with the machine that separates the Pulp the seeds and the sauce. We also had three pigs we never like to waste anything so the pulp and seeds we mixed in the pig food and of course they loved it. However the next spring the pigpen had thousands and I mean thousands of tomato plants we were giving everyone in the neighborhood as many tomato plants as we could talk them into and the plants produced phenomenal harvest. Keep that in mind if you are on the Homestead and you're raising pigs they'll love the treat and you're loving the results next spring

Our local council used the solids from our local sewage works when they made a new flower bed. The flowers were swamped by thousands of tomatoe plants. A huge crop but funny enough nobody fancied them

I see so many people talk of peeling tomatoes before making sauce or juice and I do not understand that. Tomato peeling has the vitamins in it and makes the juice thicker and better tasting---I am 75 and learned from my mother and grandmother, boil tomatoes with peeling on until soft, run thru a MILL to grind the tomato peeling and juice thru and remove the seeds at same time. Thick juice, thick sauce. Just as she has done in this video

I will try this next time! I’ve been dehydrating the skins, then blending them into powder to add to dishes. Then I vacuum pack in jars.

Sunshine Baker I am new to gardening and canning. I have many gallon size bags of frozen, quartered tomatoes that I hoped to can juice and sauce from. How would I separate juice? What process would you use? I understand how to get the sauce, but not the juice separated, from my quartered and frozen tomatoes.

the skins are not safe for canning though; under a microscope they resemble that of an orange peel and can hold onto bacterial spores which could grow to create botulism toxin. Peels must be removed for canning to reduce bacterial load

That's so funny! I needed a good laugh on this cold -35°C today in Canada. We love our tomatoes too! But don't need the pigs we compost into the ground where we have 3 large tractor tires on top of a hole that my husband used his 42" tree auger. No sporting b/c no light. We have it covered as well. Works great. Thanks for the good laugh. Have a great day and continued prosperous harvest.

Why thaw them out? Mine frozen tomatoes just get dumped into a similar container then I just put hot water in the container, let it sit for a few minutes, then the skin falls off -then I cut te tops off and toss them into a pot, still frozen, stew them till they super hot. Then they get water bathed. They go from freezer to preserved in about an hour and a half

You just made my first tomato processing so much simpler! By freezing them until they are all ripe (I have 20 Roma plants and they are ripening at different times) I can save and use them all, AND I can skip all of the boiling and blanching! WOW!! I quarter them first and wash the seeds from the cavity. After thawing, the skins slip right off. I save and dehydrate the skins for a tomato powder which can be added to dishes as a spice or to up the tomato flavor of something. The seeds are bitter and not consumable imo.

I used this process over the summer since we did not have a lot of tomatoes become ripe at the same time. Last month we finally processed all our tomatoes, making tomato sauce when we had the time. It worked wonderfully. Thank you for such a great idea.

Ive been freezing my tomatoes for years. In 1 gallon Ziploc bags. When I thaw, I clip a corner with a scissor and drain any water out. Then I drop them right into my seed skin remover. They blanch themselves,,, works perfect.

Sara, we have done this for years in the freezer, and when we wanted to use them, we put them in warm water, and the skins peel right off. We then would make chile, sauces, tomato soup. We do our cherry tomato's also.

I've been doing this for years! It's a great solution to a very big problem! I still have 3 bags left from last year, ready to go and make room for this year's crop! I made a great tomato sauce for my Christmas lasagna from frozen tomatos last December!

Great idea! Thank you! Being older, having health issues and hubby has several spinal fusions, was preparing mentally to be overwhelmed when the tomatoes are ready to be picked. I started a lot. I gardened, canned and dehydrated years ago. I thought those days were over. Now, things are different and retirement life is going to be a bit more work then I was hoping for. But you do, what you have to do. Ordered the Tomato machine. Never had one of those before. Thank you for the great advice!

i put ripe whole roma tomatoes in my freezer and later roasted whole garlic heads in the oven then took out the tomatoes to thaw but not all the way. I cut the tomatoes in half and scooped out the meat into a jar and was able to gently puree using only a fork. I aded to the tomatoes the roasted garlic clove meats and added a bit of cold pressed olive oil and my goodness was blessed with a. delicious paste that made anything i cooked with it anazing from meats to veggies amazing. @heyitsme depends on the tomato . Different kinds have more or less meat and seeds. Beef steak tomatoes have more meat.

I planted tomatoes in our old alpaca pen this year and thus had toms coming out of my ears too! I was out of freezer space & cans, so I sliced them and put them in the dehydrator. I kept one batch in chunks and the other I pulverized to make tomato powder which is WONDERFUL in stews and soups. A teaspoon gives the flavor of 20 tomatoes!!

Food processor or coffee mill. I keep my in a Tupperware container in the fridge & it's been 6 months now and its still good. I think I could keep it at room temp too or freeze it for an even longer shelf life.

I was offered cases of cherry tomatoes at a food pantry and so I took 2 cases and did this with them after catching you here! If I would have had a big freezer I would have taken more because they had many many cases and not enough takers! But now I am watching to see what to do from here! Can ya tell I am new to this!? LOL Been a city gal for 60 years now I am in the country and looking to raise some real food!

A great use of cherry tomatoes is to throw them on a cookie sheet with garlic (peeled), olive oil and onion. Roast in the oven. Slightly cool and throw into a blender or food processor and blender them up. I then can them and use as a base for spaghetti sauce, etc. the peels on the cherry tomatoes just blend right up and you don’t even know they are there.

I just wash, bag & freeze my cherry tomatoes. Then I just drop a bag of frozen toms into the pan I'm making the sauce in and let them them cook down - the peels & skins don't matter and you can hardly tell they are in the pasta sauce or soup/stew.

This has saved my life! I work full time, and between everything else I have to do on our Homestead and all the activities the kids have going on, I have NO time! If you had taken a little bit of time on the front end you will save a lot of time if you are processing it for diced or stewed tomatoes. By dipping the frozen tomatoes in hot water it will peel itself. Then thaw them as you did. And don't toss your skins. Dry them and make tomato powder. The seeds you can save or toss

I agree. Putting up the produce ready to use makes it much more versatile IMO. And she's totally right about the water separating itself out before putting them through the strainer, much thicker sauce.

I'm happy to see a video that I always promised myself I was going to make for others. You and Kevin did an excellent job! I freeze tomatoes all the time because I live in Southern California my growing season is very, very long - nearly the whole year! So I'm always up to my ears in tomatoes and once I have processed and made all the bolognese sauce, marinara sauce, soup, chili and tomato passada to feed an army, I usually do wind up freezing what's left over. I throw in everything from heirloom cherry tomatoes to beefsteak heirlooms to different varieties of hybrids and it makes some pretty amazing product. I save the "defrosting liquid" and it makes one hell of a tomato consomme! But I digress. I grow some of the same tomato varieties each year so the taste of my sauce products are delicious, unique, and fairly predictable. But this next year I'm going to add some paste tomatoes to my garden to it to give things more of a rich overall flavor. Thanks again for the video! Great work and thank you!

I have done this for quite awhile and it makes canning so much easier ! We just made Salsa at Christmas and it smelled like Summer!

Thank you so much for all your G-R-E-A-T how to videos, I am a newly converted URBAN HOMESTEAD-ER (I live in a suburban/city environment) but have been gardening for years and have not figured out what to do with all my veggies at the end of the season besides the usual canning and giving away to family, friends, and strangers because I hate to see it all waste away on the vine, or go to seed and die out. I also freeze my tomatoes but when I process them I run one under water the skin will peel right off I then put it in a French fry cutter." I have a heavy duty one" then chop it up. immediately into a gallon freezer bag then back to freezer. do not let it thaw.. just like bell peppers I portion out into what ever I am cooking. I also chop up onions, potatoes when I chop up potatoes I have a large pot with water that I have added lemon juice to so they stay white, summer squash, and other veggies. I then make a frozen mix of a gallon. when I get ready to make a soup I have a ready mix to go in. I also use the mix to make breakfast burrito's.

We have done the same as Linda Cole and it works great for whole tomatoes. My husband likes to chop or puree the tomatoes with a bit of fresh dill, or other spice if you prefer other, put in bag or containers and then put it in the freezer to pull out and use.

That CucinaPro works fabulous. I processed 20lbs of thawed frozen tomatoes in no time flat. My mom got it for me. I didn’t think much of it when I opened the box but I was pleasantly surprised. Cleans easily and very little waste if you run the fruit through three or four times. Very efficient especially for the money.

Just watched this again. Great info Sarah! I froze mine last year because of this video and just had time to process. Worked great. I was amazed how much liquid run off once thawed was such a waste. But I got several jars canned of tomatoes and a few of juice canned. Thanks again

My mother always did this with the end of her tomato crop over 40 years ago. She had a huge 1/2 acre garden and canned or froze the family's veggies for the winter. She did exactly what is described here, you can pull out a few or a lot. I did this with some of my end of season bumper crop, but I also had chickens and they were very, very happy to help get rid of the extras o any blemished tomatoes. I have canned them a few months later when I had time.

I’ve been doing this all summer and I just Put them straight into the crock pot with carrot onion and celery and ox cheek and it made the best ragu I’ve Ever tasted

Great advice, thanks for all the info. Regarding the pulp/seed-skin separator, I saw one video where an Italian grandma put the seeds and skin through a second time and got more pulp out of them. I think they were cooked first, but this seems worthwhile to maximize the harvest.

I did this and it is working great, somethings I did differently was I washed off and cut out the stem button and any spots before freezing, it is a good step to catch an occasional bad tomato that looks good on the outside but isn't inside. When I thawed them I didn't just dump the tomato water, I gave it a quick boil to sterilize it, not sure if that is absolutely necessary, then I cool it and drink it, it is delicious. Also the end product is so much better than what I have produced before because there is so much less water, without hours of boiling.

New sub. Been binge watching since 3:00 this morning. Love this stuff. Never preasure canned before , and frozen tomatoes? You're never to old to learn something new. And I thought I was a country girl. Nice to get back to my roots. From now on, I will be watching , doing , and learning.😊😊 Thanks.

Another GREAT video!!! I’ve had that lucky problem of having an over abundance!! Nice to know I can freeze em whole!! I do slice in half, sprinkle with seasoning and roast em in the oven... ohh they’re soooo good right out of the oven BUT... once cooked it’s CERY easy to pull off the skin and throw the tomato part into freezer bags for later!!! 👏👏👏😁😁💗💗

Great job, we froze a lot of our tomatoes this last summer, that looks like a great juicer but we use our ninja processer and a sifter that works good for us.

I found your site yesterday. I really enjoy your videos. Freezing tomatoes is what I do too. you can do the same with soft fruit. I do it with plums (pitted) blackberries, raspberries...etc. Helps to accumilate enoough fruit to make a batch of sauce or jams and jellies.

It's been a few years since I've canned tomatoes and used this method. Oh my gosh I just thawed about 6 lbs and a 11x7 dish is half full of water! Looking forward to nice thick sauce!

Thanks for this. I have been getting the 4-5 at a time and freezing them...now we are leaving on vacation..so I picked all I could and when I get back I can make and can sauce! Viva la freezer!

My garden exploded and I had so many tomatoes I didn't know what to do with them. I watched this video, and I put them in the freezer until I had time to get to them. Thank you!! Would love your BBQ sauce recipe. I followed this video and it worked perfectly! HAPPY HAPPY. I will do the same next year too.
