Oh Yum with Anna Olson

Depending on where you're from these are called Imperial or Empire cookies.
The dough can be prepared and frozen for up to 3 months. Thaw in the fridge before using.

The ingredients and recipe instructions make about 2 dozen sandwich cookies
Ingredients for Empire Cookies:
Tender Tart Dough
½ cup + 2 Tbsp unsalted butter, room temperature
½ cup + 2 Tbsp icing sugar, sifted
1 hard-boiled large egg yolk
1 large egg yolk
½ tsp vanilla extract
1 ¾ cup cake and pastry flour, sifted
¼ tsp salt
Icing and Assembly
⅓ cup raspberry jam
1 cup icing sugar, sifted
1-2 Tbsp warm water
¼ tsp almond or vanilla extract
6-8 glacée (candied) cherries, each chopped into 6 bits
Baking Directions:
Tender Tart Dough
1. Beat the butter and icing sugar together until smooth.
2. Push the hard-boiled egg yolk through a sieve and stir the raw egg yolk and vanilla into it. Add this to the butter mixture and stir until blended.
3. Add the flour and salt to the butter mixture and stir until blended. Shape the dough into a disc (it will be very soft), wrap in plastic and chill until firm, about 2 hours.
Icing and Assembly
1. Preheat the oven to 325 F and line 2 baking trays with parchment paper.
2. On a lightly floured work surface, gently knead the dough just to soften it slightly. Roll out the dough to about ¼-inch thick and cut out cookies using a 2-inch fluted cookie cutter, placing the cookies on the baking trays, leaving ½-inch between them.
3. Bake the cookies for 10-12 minutes, until just lightly browned around the edges. Let the cookies cool completely on the baking trays before assembling.
4. Stir the raspberry jam to soften and spread a little on a cookie bottom and sandwich a second cookie on top, pressing gently to secure. Repeat with the remaining cookies.
5. For the icing, stir the whisk the icing sugar with 1 Tbsp of water and the almond or vanilla extract, add the remaining water if needed, until it is a thin icing consistency. Set aside.
6. Spread a thin layer of icing on top of each cookie, top with a piece of glacée cherry and set on a rack to dry. Let the cookies dry for about 3 hours before storing in an airtight container.
7. The cookies will keep, stored in an airtight container, for up to 3 days.

@Repeat After Me: actually the Origin is Scotland ... it was originally called "German Biscuit" then WW1 started and the name was changed to the empire biscuit ... and no doubt the name will change again when Scotland leaves the UK soon

I came across a recipe for Linzer cookies in a cookbook few years back, that spoke about the usage of a boiled yolk in the recipe. I was like "ewwww" at that time. But seeing Anna use this technique, is giving me the confidence to try this method. 😏

I made these dough yesterday to make Christmas cookies. they came out very good. What I did differently, I used my mini food processor to combine the raw egg yolk with the cooked one so it gave a more creamer texture . I was afraid to have pieces of egg yolk in the batter so that’s why I combined the two of them with the food processor.

Adding to last comment is it maybe the particular cookie dough mix that I'm using the one I'm using has 300 g of butter for a lot of butter is it perhaps solidifying as it cooks and that's why does it keep it shape.?

maybe a late reply, but I would personally just take out a 1/4 cup of flour and replace with 1/4 cup of cocoa maybe a 1/2 cup

BÇ - it's just an icing sugar glaze Which usually consists of 2 tbsp milk then add icing sugar until it's consistency is just as shown as what anna did

Is there a reason when I make cookie dough and I cut the cookie out with her cookie shaper that they don't come out crisp and round like the pictures you see on KZfaq when they are cooked

Keep them in the refrigerator for a bit longer. They'll firm up more.

Yes. I do this now. Cut, onto cookie sheet, then into fridge to firm up, then into oven.

There isn't any liquid, but use spreadable butter. Gives a better texture.

It depends on your family what you call them I come from a long line of bakers and we call them German biscuits. Calling them Empire biscuits is an aftereffect of WW1 like calling German Shephard dogs Alsatians.

Looks like she forgot to add almond starch into the icing, plus I don’t think vanilla is part of the recipe, and I think she used the wrong jam, it’s either peach or orange jam

Not for empire biscuits, & you need raspberry or strawberry jam its a Scottish biscuit recipe 😊 Marmalade would be interesting though!.
