The most Mexican drink is not Tequila or Mezcal but an ancient drink made from cactus, called pulque. This is a traditional drink you will only find in Mexico and it's been drunk for centuries.
We visited the pueblo mágico of Tepotzotlán in the State of Mexico to find out more about this ancient and traditional drink, which is almost totally unknown outside of Mexico. This is because pulque is made from the maguey, a huge Mexican cactus plant, similar to the agaves which are used to make tequila and mezcal. Unlike tequila and mezcal, pulque is not distilled. It's a wine-like drink which never stops fermenting, meaning that if you don't drink it soon after it's made, it tastes awful. Because of this, it's very difficult to export pulque outside of Mexico.
We visited the maguey fields and saw the ancient process of extracting the aguamiel from the magueys and then fermenting it into the alcoholic drink, pulque. This process has barely changed in centuries since this drink was popular in prehispanic times.
Nowadays, beer, wine, tequila, and mezcal are much more common than pulque in the bars of Mexico. If you look hard though, you can still find pulque being sold in many places - just make sure it's fresh!
If you visit Mexico, you should definitely try pulque, the alcoholic drink of the Aztecs that can't be found anywhere else in the world!

I'm 76 now but when we went to visit my abuelita and I was 14, I had my first taste of PULQUE. I LOVED IT and no, it did not make me drunk. It was just a fresh, citrucee taste to it unlike anything we have anywhere. The pulque was sold by vendors coming down the street with large barrels of it. You brought your own pitcher. They provide the drink. But now I KNOW, it does NOT LAST LONG. You had to drink it and enjoy it. No saving for tomorrow or you might get a tummy ache. I've never forgotten my enjoyment of it. Now they are mixing fruits to bring up the life span of it but I would NEVER drink those. Only the original flavor is BeST. The rest is NOVELTIES of modern man.

I read and study about Mesoamerica a lot, and have read about pulque, so it is very cool to see the knowledge of how it’s made has been preserved. It’s tragic to hear that pulque has been denigrated over the centuries, but I expect it will be popular again as more and more people become aware of Mexico’s Pre-Columbian cultural roots.

My dad is obsessed with pulque. He has fields of magueys in mexico that he’s been prepping for years. Cant wait to be able to make it!

The age of pulque is really a matter of taste. Really young pulque will have a fresher and cleaner profile, but there are pulques that are fermented for up to a couple weeks and they will take on a more vinegary almost kombucha like character. Its not everyone's cup of tea, but there's nothing wrong with the older stuff, it's just a matter of whether you're ok with a little funkiness. There's pulque ranging from a couple days all the way up to weeks, so there's something for everyone along that spectrum. Such a great drink!

I did a tour on the way to Teotihuacán at an artisan shop and we learned about the Maguey. It was used for paper, needle and thread, pulque, and when it rains the worms are pure protein.

I learned about pulque from the Marlin Brando movie "The Apoolosa". It is traditional to drink your first glass of pulque in one drink not sip it. Bandits: "Senior how was your pulque?" Brando: "Ah...there were a few flies in it but not too many.

Its an acquired taste. 4/19 *restaurant style checkout "aqui es Texcoco" in Commerce on S Eastern Ave, South of E Slauson Ave. * aside from cane sugar juice, agua miel is the sweetest natural juice I have ever tasted thus the name (honey water)

Each Mexican state has it's own distilled drink (moonshine alike done in the past), like: "Charanda" from Michoacan. And : "Mosco" from Veracruz (I believe, correct me if I"m wrong).

I’m in Oaxaca city now. Mundo Ceiba restaurant serves good, fresh pulque. It’s a tasty,fizzy, refreshing drink! I get the pulque natural sin hielo for 30 pesos. It’s close to la catedral Santa Domingo.

Don't spoil the ORIGINAL taste. Get an America smoothie if you have to have different fruits. Don't adulterate our Mexican Pulque. I'm 76 and a very Mexican lady born in Morelia and raised in Chicago from one year on. I know my stuff. My parents visited their parents and family every 2 years.

Not sure if you are referring to Tepoztlan, which lies a bit north of Cuernavaca in the state of Morelos and is relatively well known and certainly worth a visit, or Tepotzotlan, located north of Mexico City, which is the location of this video. Karen shows a couple of brief glimpses of a magnificent baroque Jesuit church, San Francisco Javier, and the adjacent convento is the site of the Museo Nacional del Virreinato, the best museum on the subject in Mexico. It's well worth a visit before sitting down to lots of pulque.

It's difficult to find good pulque in the centre of Queretaro but it's quite common in the surrounding towns like Bernal.

There are a lot of controversial opinions. Some people don't like it at all. I didn't like it's flavor when I was younger but I think I aquired the taste.

I tried this. It’s actually good (if u usually like fermented drinks). I think people are exaggerating when they say it taste bad. I’ve had drinks at a bar or beers or wine that taste much worse. I wish this stuff was more available in Los Angeles or even the US in general

I have a Mexican physician friend. He has warned me never to drink pulque. He said it is a drink served in the back alleys of Mexico City (D.F.) and is associated with intestinal parasites. He said he has treated many of such infestations and these patients had a history of buying pulque from back ally vendors that operate clandestinely. What is your opinion? Hola Karen. I really enjoyed this video when it was launched but I couldn't think of much to add until now. Prior to your video every account (by Americans)of pulque indicated that it was suitable for down-and-out borrachos and no one else. The taste 'was terrible'. Thanks to your very informative video I now know how this impression developed. And how good pulque is made and should be consumed. Thank you. The main reason I'm writing is that I just found a report about Mexico's IPN, and France's INRAE, who have been researching pulque. They have discovered that a cancer inhibiting probiotic found in pulque sediment, the lactic acid bacteria called Lactobacillus brevis, can prevent the proliferation of colon cancer cells by up to 40%. The best strain was found to be endemic in Nanacamilpa, Tlaxcala. The effects are similar to 5-fluorouracil, which is used in chemotherapy, but without the horrible adverse effects on healthy cells. Nineteen other strains were studied but were less effective. One other comment. Your video showed a couple of all too brief (for my tastes) views of the facade of San Francisco Javier, a magnificent baroque Jesuit church, with an even more incredible interior. The adjacent convento complex houses the Museo Nacional del Virreinato, the best on the subject in Mexico. The friary had more patios (three as I recall) than any other in Mexico, probably due to the three colegios located there. I hope you had a chance to see it. I'm not religious in the least, but I love and admire Mexico's colonial churches. The more I study and learn about Mexico's colonial architecture the more I enjoy seeing it. Your videos usually give a brief nod to any churches in the video before rushing ahead, so I suspect architectural history was not a major focus of your time at university. That's ok. One can't study everything and most people aren't as interested as I am. I'm looking forward to your next video. Stay well, both of you

Yes it's fair to say that I don't know much about architecture. I can appreciate that it's beautiful but I can't add much more. It's interesting that you mention the healthy properties of pulque. Last weekend we were in the Sierra Gorda and we learned about some communities which until the recent rise in tourism, were living in extreme poverty. There were a lot of magueys in the area and apparently because they drank a lot of aguamiel, they were surprisingly healthy despite not having access to much food. Bad pulque is really horrible and it's not always easy to find fresh pulque so I understand why a lot of people don't like it.

I guess it really pays to have a sleeping dictionary close at hand when learning a new language. So, you visited the Sierra Gorda last weekend. I'm a little bit envious. I drove through the area in 1974, not long after the highway 120 was completed. It was a new shortcut and I was in a hurry to get to some destination (I don't remember where) so I didn't stop to see anything. There was little or nothing in the literature about the area until a couple of years later. So much to see. The Junipero Serra missions date from the early 1750s to the late 1760s and are a wonderful example of folk or Mestizo baroque. The churches at Jalpan (Santiago, 1751-1758), Conca (San Miguel, -1754), Tilaco (San Francisco de assisi, 1754-1762), Tancoyol (Nuestra Senora de la Luz, 1760-1767), and Landa (La Purisima, 1760-1768) have all been recently restored. The five have similar features, including a cloister attached to the church, but each is also unique. I would love to see them in all their painted glory. The two churches in Cadereyta are much altered from their original appearance but one of them still contains a great gilded retablo dating from the 1750s. Near Cadereyta, and closer yet to the village of San Joaquin are two very impressive archaeological sites that were completely undeveloped in the 1970s. With four ball courts and over a hundred structures these sites (Toluquila and Ranas) are places I would definitely visit if I were still able to travel (maybe in my next life). Both sites were associated with Teotihuacan as well as Tula, a long time span. Also off the beaten path is the ruined convento at Bucareli (very late 18th century), rare in that it had two arcaded courtyards (Acolman near Teotihuacan, and the Jesuit complex in Tepotzotlan are the only other conventos I can think of with more than one cloistered courtyard). You probably did not have the opportunity to see everything I have mentioned but the internet offers lots of photos, especially of the archaeological sites. After last weeks video I can visualize your day, unless you are on the road. Stay well

It must have been very interesting to see just after the road was built. It still seems quite small and isolated in Pinal de Amoles. This time we just stayed there but we went with a friend who is from Concá so I hope we can see there too soon!

@Johnny Michoacan Aquí es Texcoco, La Barbacha and found a new place called Sabores Oaxaqueñas. All in Los Ángeles. I’m sure there are more and I’ll keep on looking.

I've gotten drunk from pulque. It tastes good but it leaves you with a funny smell. I would describe it as a oozy burnt plant like smell if that makes sense.

I bought a can of pulque in Florida about 10 years ago. It was actually being sold in the convenient store, Circle K. Unfortunately it tasted and smelled like vomit. I guess that's because pulque doesn't last very long like Karencita says and maybe can't be successfully bottled.

The consistency to me is pretty strange.......otherwise it tastes pretty good. Definitely prefer tequila and beer.

have you tried destilled pulque? they say once you try it you won't go back to tequila.

Aca en Denver Colorado, quisieron introducir pulque en lata y botella pero no pego. Tambien cervezas mezclada con tequila y con sabor a chile con un chile flotando dentro del la botella.
