Spicy cabbage
I discovered this version of sauerkraut about 4 months ago, since then - it is always on our table.
I wanted something spicy in the preparation, but so that it was also tasty and beautiful.
As a result, he was born, inspired by Korean salads and Kimchi. Only useful and unforgettable. Cook - you won't regret it.
If you like spicy - more pepper, if you don't like it - 1 will be enough.
For the recipe:
White cabbage - 1 head of cabbage
Carrots - 1 large or 2 medium
Radish or daikon - 1 pc.
Bitter pepper or chili - 3 pcs.
Garlic - 1 pc.
Paprika - bowl (50 - 60 gr.)
Cooking
Wash the cabbage, remove the top dirty leaves.
remove one good solid sheet - it will go up.
cut the squares - quite large.
squeeze the juice.
cut carrots and daikon into strips - you can use a grater for Korean carrots.
Cut the pepper into rings. I like it bigger, to have bright red accents.
Cut the garlic as you like.
Add all other dry ingredients to the bowl of cabbage and mix.
We put everything in the jar up to the "hangers". Fill with water to hide it.
We fold the left sheet with an "envelope" and put a pebble-press on it. Cover with a rag.
Leave at room temperature for 7 days. You can try from the 4th. We periodically sink the pebble.
And then we hide it in the refrigerator and don’t tell our family members - we give it out in small delicious portions. And then we prepare the next one.
Kvass from this cabbage can be used to dress salads, make sauces based on it, or eaten with cabbage.
