This QUESO FLAMEADO (queso fundido) is a real treat, perfect appetizer or meal when entertaining family or friends. This is an appetizer served in most Mexican restaurants here in South Texas. QUESO FLAMEADO can be transformed into a perfect meal by just siding it or topping it with your favorite meat or veggie. What is there not to love about a melty, gooey skillet of cheese, roasted poblano, onions and chorizo with Pico de gallo! I love serving it with flour tortillas and refried beans, that to me is a meal in itself. If you like to entertain, this is the perfect party starter and once you have mastered this dish, you can transform it with your favorite meat, the possibilities are endless. ❤
INGREDIENTS----------------
•7 oz. Chorizo
•1 med/large poblano pepper (roasted, seeds removed and cut into strips)
•1/4 medium onion (julienned)
•12 oz. grated Monterey jack cheese
•8 oz. grated Oaxaca cheese (or mozzarella)
• 2 Tbsp olive oil
•1 minced garlic clove
