He put the egg mixture over a pot of steam, which is a good way to cook and make the egg safe to consume without getting a bunch of cooked egg chunks in your recipe

Both the egg whites and egg yolks can get " cooked " with drizzling sugar and water syrup I think at 80 degrees C, just like Italian Meringue method
