Here in California, they don't eat anything much on toast. Food on toast seems to be an Anglo-world thing, not an American one. However, we do have mashed avocado on toast here, so go figure. As a Kiwi, I grew up with most of the lunches my mother made served on toast. I miss food on toast!

great idea, just swap the margarine for butter, from my research New Zealand has become leaders in the field of butter, I've sworn off margarine for years and Canadas butter is terrible as they are adding soy to the cattle feed, a sacrilege!

May I add that vegetable oils are bad for your health which include margarine. Healthy oils are Avocado oil, olive oil, and coconut oil along with animal fat like lard, tallow, and bacon grease. Your recipe looks great and I’m going to try it tomorrow. Thanks. 😊
