Just made this and absolutely LOVED IT!!! Super super easy. The hardest part is waiting for the cabbage to soak and not eat it from the bowl when you mix it with the sauce! It’s so refreshing and crunchy. All my family wants some now 😉

I absolutely love kimchi, gotta make this! I sometimes just eat it straight out of the jar as a snack. Since I'm Mexican, i wanted to use a Mexican chile (though I guess all chiles are from Mexico/Western Hemisphere 😂) but I'll do both Korean and Mexican chile!

Thank you for the recipe. Looks delicious! I think you have to make sure people understand that this is not kimchi, but it's rather a salad, which means you have to eat it fresh, not let it sit and get fermented because this kind doesn't; ferment but rot.

My go to Kimchi recipe. It's absolutely unbelievable. For Christmas I substituted the jam for a apricot cinnamon spice jam and it gave it a real festive vibe!

This looks great. The only thing I would add is some ginger. I can’t have kimchi without ginger. And I’d add some Korean daikon as well. Yum.

It looks so good,what a process. I like kimchi and Korean food overall, I love that there r so many uses for veggies and side dishes. I just learned recently gimchi can include many types of veggies? then my favorite is bae ju kimchi for sure

LIKED!! 👍 Somehow, I like fresh cabbage kimchi better than long fermented ones. The cabbage tastes sweet, almost like spicy salad, LOVE IT!! 😍 Perfect diet food for me, no guilty feeling by eating it a lot!! And spicy sauce... a PLUS POINT for me!! 🥰

I love this recipe! It's quick and easy and waaaaayy better than store bought. There's a grocery store in my neighborhood that sells a cup (8oz) of kimchi for $12.00!!!!! NoNoNO! Please don't ever pay that much money for kimchi! Make your own using Seonkyoung's recipe!

Thanks! Undoubtedly a fantastic recipe!!! My Korean mother-in-law is up in arms at adding soy sauce and not using Mu (Korean radish). Also, not covering the cabbage in salty water, and not leaving them overnight. But she is very judgy about kimchi, and easily makes dozens of varieties, so really, just do it the way you want to. For more aroma, toast the sesame seeds before you use them - that is tastiest ;) I just prepared an Incheon-style kimchi with prawn fry, anchovy sauce, grated pear, ginger, a bigger portion of spring onion, and some extra fresh chili. Sooooo fragrant!!!

I tried Pa Kimchi (Green onion kimchi) and it burned my nose but it was good! Don't eat this kimchi if you're going on a date or have to talk to people! 😁😂 This is isolation kimchi only! 😁👏🏾

Thank you for the recipe! The few times I tried kimchi with takeout food I found that it was too sour for my taste but I am determined to keep trying until I find one that suits my taste😅 or attempt to make my own lol

So the kimchi in Korea is more sour? I have heard that this is the favorite dish in Korea. Is that true. I keep up with BTS. And they're always talking and eating Kimchi. Didn't realize it was mostly cabbage. You have really opened up my curiosity about this dish. Thank you. You're soft spoken voice made me more interested in seeing the whole video. Kimchi turns sourer and sourer as it’s fermenting, so maybe you'd like the taste of fresh kimchi. Try making it at home; it's easy and super delicious.

the longer it fermented the sour it gets. if you dont like sour kimchi at all just make fresh kimchi like this recipe but if you can handle a little sour kimchi, u can ferment the kimchi and u can make kimchi stew once it gets too sour for your liking. trust me you'll will love it

Question bought and was preparing everything until I noticed I don't have gochugaru or chili flakes. Cabbage is sitting in salt + bit of water. Monday I can go to the store, what should I do until then (saturdzy evening now)?

It will, but not the same as regular kimchi. This kimchi is not meant to keep for years like other traditional kimchi since we soaked them only 1 hours & the sauce is super simpler.

You can just add less of the gochugaru (Korean red pepper flakes). You can't make kimchi without it, but you can just adjust it and put less. Because you need it for the color and the distinct flavor of kimchi ☺️

So I'm white. But I've always been super interested in cooking all sorts of different meals and recipes from any and all cultures. I love trying all the foods that are the "norm" for all different people, but because of social media and stuff I'm kinda scared to try this one because I've seen a lot of stuff about cultural appropriation and what we are and aren't allowed to do with other peoples foods and clothings. So is it wrong of me to try this delicious recipe for myself or should food be shared and enjoyed by all? Edit: thanks so much for the help! Im definitely gonna try this once I get some more research done! :)

I see your point of view. The way I see it is that I love the food enough to give it a try on making it so that I can enjoy and have a chance to appreciate it. I think you should give it a try and if you’re willing to be open to critics from their culture on the way it is made i also think you should be open to see why they think that way. But listening and understanding does not mean you can’t have a go at it. Best of luck 😊.

Cultural appropriation, particularly in the western sense, is not a thing in Korea. No one is going to accuse you of trying to steal Korean culture just because you made a kimchi recipe
