So far,I've seen no one who can pull that one off realistically(downshifting to drastically speed up).Not even on a climb.

In the scene where he turns the downtube shiftlever he shifts into a smaller cog. You can see he takes tension of the cable. Than they show the rear derailleur shifting into a bigger cog. So that in itself does not match. And than there is the thing of shifting into a lower gear for going fast.

what it's worth here now, through the decades there's been wind up a good cadence in the easier (lower) gears then shift into the (higher) gears keeping no less a cadence and maybe more, and like a rocket accelerate in seconds
