I'm sad to say I was vegetarian for 25 years before going vegan (d'oh) but the thing that surprised me the most was that I stopped craving cheese! I assumed my vegan life would be daily torture and deprivation. But once you give dairy up, it seems greasy and weird, and I've totally lost any desire to eat it. Love your videos!

The cultural element is so under-discussed! I'm a vegan Arab and I was basically eating chicken, rice, sandwiches, and salads for every meal. Now that I'm vegan, I've started actually exploring Arab cooking and have taken the time to learn how to best cook the meals my parents always made.

Because of this channel and Pick Up Limes, I've found ways to reduce my consumption of animal products and incorporate more vegetables into my diet. I'm not vegan, but I have learned some tasty substitutions to replace dairy and meat products. Thank you for your work on this channel and the lovely recipes.

I'm not vegan, but my cholesterol was also high (and iron on the low side). Your videos helped me eat more plants and my cholesterol has noticeably deceased! And you also help me use my instant pot. And bond with my brother who is 100% vegan.

Thank you for this. I am 69 years old and have been a vegetarian since 1972. Things have come a LONG way since then for those of us who don't want to eat animals. It was particularly rough in the midwest, where I live. Today, there are way more choices and more restaurants who accommodate us, and also fewer questions, fewer "jokes", fewer people getting defensive about their own eating choices. I remember answering one woman who asked "why" by telling her I didn't want to kill animals. Her response was "But, God ate animals."..... There are also WAY more cookbooks. The first one I remember is Ten Talents. I remember some good things, but also some pretty awful stuff too. Like soy bean loaf made with whole soy beans. Then Anna Thomas came on the scene with her Vegetarian Epicure books. She took vegetarian cooking to a whole new level, but looking back on them, they were super loaded with things like butter, cheese, cream to add umami. I am still a vegetarian, but kind of a vegan wannabe. I love your channel and I have your Instant Pot cookbook. It's a well used favorite. Thanks again, Nisha.

@@Alina_Schmidt Yep. Just one example of crazy reactions I've gotten to being a vegetarian over the last 50 years. Besides, there is good reason to believe Jesus was a vegetarian. Many scholars believe he was an essene Jew or at least heavily influenced by them. Essenes were vegetarians.

As an older dude...veganism has been much easier on my aging digestive system, plus the benefits you mention in terms of more consistent energy levels and not feeling as 'bogged' down and lethargic after meals vs meat based diet. Also alot easier to clean up after cooking vegan dishes. Cleaning up animal fat after cooking is just nasty!

I can relate to you and I found that in the beginning it was emotionally overwhelming to change the habit but once you found your why the recourses just find you. Now it's second nature for me. Vegan for life

I went vegan 2 years ago. The most surprising thing for me was starting at 58 years old, being a prior big meat eater, and finding that going vegan was so easy! Oh yeah, my cholesterol levels also dropped over 40 points and is in the healthy level! Love your videos, Nisha!

Dropping your cholesterol that much may actually have prevented a heart attack or stroke. You will probably live a longer life with more vitality because of this choice.

Couldn’t agree more with point 4… My meals when I ate meat were soooo bland and boring. I look at my meat eating friends now and the food they prepare and I am not the least bit envious. Turning vegan has made me 1000x better at cooking because it has forced me to become more creative and watch channels like yours for tips, tricks and recipes which I use regularly now every week! Going vegan pushed me to learn how to cook. Because of this I've developed a lot of confidence in being able to take care of myself once I'm on my own. Learning how flavors work and making things for myself and the people I love has genuinely brought a lot of joy and color to my life.

When my young adult daughter went vegan two years ago, I pretty much reacted as your parents do in this video: skeptically, critically, and negatively. I had no idea how to cook a vegan meal; I pretty much cook l lacto-ovo vegetarian and occasionally have fish or chicken, but I was kind of stuck in a cooking rut: pasta+salad, rinse, repeat. I enjoy cooking new recipes and healthy eating, so I went looking for ideas. I found your website, which is now my go-to when I want a delicious meal idea even when my daughter is not around. I am still not vegan, but I have added many plant-based meals into my cooking repertoire and have completely changed how I view vegan eating. Thank you!

Hi Nisha! I am currently a Physician Assistant student and have been on a path of discovery of how and why vegan diets seem to be able to reduce the risk Type II diabetes and the severity of that and other chronic ailments in folks. I know that once I am working in the field, Type II diabetes in America is an extremely common diagnosis and so I want to be able to recommend actual resources for diet changes that people can explore as a way to help with their diagnosis. Your website PLUS the companion videos are truly essential to helping others (who really do not have the time due to work, family constraints, ect) to explore this vegan option in a way that is easily accessible and flavorful! I am excited to try your White bean with kale soup recipe tonight. :) Thank you for sharing your work!

I've been meat-free for 1.5 years and all I can say is living this way has tremendously improved my mental well-being, my energy levels and my physical strength for my workouts. I'm 26 but feel so so much better than when I was 21-24! Thank you for the videos you make, it has helped me througout my journey :)

You mention vegan versions of Mexican and Japanese and Indian foods, all of which are great and I enjoy, but I was raised in the Mennonite tradition, and I have found few vegan versions of traditional Pennsylvania Dutch cooking, so I’m trying to make my own! So far I’ve managed to figure out a vegan version of the traditional potato dinner roll, chicken pot pie, meatloaf, and mincemeat pie, but many dishes still present challenges, for example liver wurst, sauerbraten, or head cheese. I have learned much from your videos and use what I learned in my own culinary experiments, as well as making your dishes pretty much exactly as your recipes instruct. Thank you for good food, good entertainment, and especially your boundless positive energy!

Have your cook book and made many of your wonderful recipes. Have been whole plant based for over 5 years. Being diagnosed with diabetes scared me to change immediately. Reversed it in one month. The transition was easy and have never eaten any animal products since. Humans don’t really have too and that’s why the body adapts so quickly plant nutrients. Thank you for helping us thrive.

I'm so grateful she acknowledged people with disabilities, as a disabled person I have struggled a lot to go vegan (I haven't had meat or dairy for a few days) and reading vegan after vegan writing "its so easy" is less than encouraging, I watched earthlings and that is what has made me take the plunge but I'm not a great or inventive cook, I have difficulty preparing meals and getting and saying full and keeping myself energised and then there is the cost vegan alternatives are very pricey, I'm taking it one day at a time, I'm hoping I can improve upon things but this is really hard

As an omnivore, I love eating more vegan dishes because I find them super filling and (when you stick with whole food recipes) help me get more veg and legumes into my diet. My husband, who never met a meat he wouldn't try, has now eaten numerous vegan dinners and walked over to the stove for seconds and thirds. While I'll likely never transition to vegan fully, I do love the creativity and will gladly eat this way whenever I can.

Nisha is one of my absolute favorite vegan KZfaqrs....she is adorable and genuine. She actually looks like she's having fun and not just here to try and make money. So happy she's inspiring people to adopt a compassionate lifestyle and realize that you're not "giving up" anything by going vegan, but gaining so much more ....helping the animals, helping the planet and improving your own health at the same time! It really should be a no brainer!

Love this video! Next month I will have been vegan 17 years, and I still eat way more variety than before I went vegan. I really appreciate your channel for inspiring me to understand how to build flavors in a way that I never really had in the 15 years prior. You have gotten me out of my rut! I now know when to add aromatics and flavor boosters to get me to the flavor destination I want for my meal. You are literally the only vegan person I have found myself watching your videos from beginning to end. After watching a video on how they treated animals just so we could get our meats and it was where supposedly organic things came from I decided to cut it all out. Your tasty vegan dishes have helped me so much in wanting to stay this way. I made your vegan brownies last night and my kids were in love they literally kept asking me every 20 minutes “can we have another one, please mom.” 😂 I’ve made some in the past before and my kids new they were not “real brownies” is what they called them and threw them in the trash, but your recipe omg they were AMAZING. I’m so happy I found your channel, you are literally a life saver when it comes to cooking up delicious, amazing, tasty, vegan recipes. 💛

I went plant based 13ish years ago after reading Eating Animals. I totally agree with you. My diet is far more diverse than it was pre-vegan. I eat such a variety of foods now from many different cultures.

Gosh, I didn't realize that book was so old! I went vegan not long after reading it in 2019, which I'd picked up by chance in an airport before a long-haul flight. It's the one book I recommend to anyone considering going vegan.

@@trishk.7876 I am so happy to hear it's still being sold in retail outlets where space is limited! It was life-changing for me. The author put a lot of research into it. I picked up a copy from the bookstore after seeing him on Jon Stewart I believe. Jon was eating a plate of bacon during the interview. I think Jon has since gone vegan and opened a farm sanctuary. ❤

Not vegan but have gone vegetarian and the big one that resonates with me is how much better my cooking has gotten. Meat being the centre of the plate was definitely a major crutch and I love how much more varied my diet is now that I've gone vegetarian. Your recipes have been such a big help and I particularly love the long, fancy meals like tofu Tikka masala and chili.

Your lentil curry and tofu scramble are my staple meals from now on ☺ I also love baked beans, lentil, sweet potato and cauliflower curry, arugola pesto with chickpea pasta, vegan omlette, pea soup with smoked tofu, eggy spread made with tofu, meatless meatballs, savory pancakes with veggies, stew with vegan sausages and lentils or for dessert/snack some peanut butter bars and many more tasty meals 😃

I think one of the hardest things is to eat differently than your family and friends, and to give up family and traditional foods of your country (unless you can veganise it:) I totally get it. Once I realised I am an adult who can make my own traditions even though I dont have kids, it was easier and became about making something fun for the holidays. When bringing food to a party for sharing, you contribute and many people are grateful and gobsmacked over how delicious it really is! Generally, its surprising to me that being vegan is so easy, and its very enjoyable, like Nisha says. I dont feel deprived, I feel blessed 😇and aligned with my values

I bought an instant pot in 2020 and was looking for cookbooks and general instructions on how to use it. As an omnivore, I bought two books, yours and Jeffrey Eisner's. I haven't made a single one of his recipes, but your blog and cookbook recipes are now staples in our home. My instant pot has never seen any animal products in it and we're not missing a thing. Looking forward to your second book!

I went vegan in 2019 and have to agree with everything you've shared here. I remember when I first went vegan the influx of questions and people who wanted ro argue with me over it. It was hard to know what to say to people. I have since done the same and scripted some answers and come backs for those times. 💜💜💜

It’s amazing how they want to argue about what nutrients you’ll most likely be deficient in! While they eat like crap. Or there’s the, “I tried going vegan for a week.” Lol or “I can’t give up my chicken but I don’t eat red meat.” Lmao. All the excuses. They should realize that some of us never thought we’d be vegan.

@@atroia1 exactly! I never thought I'd go vegan. It was not how I was brought up. We were poor and literally ate junk because it was cheaper than eating g healthy! I however have always been a lover of animals and after going vegan for my husband's health (yes he went vegan too) I have found that my beliefs and way of eating are so much more aligned now. 💜

I had eaten 750 grams of ribs, and left the coleslaw. I never would have thought that I would go vegan a couple of years later. Today I am a passionate animal rights activist, and I will never use animals again in any shape or form!

This video is so good on so many levels! Yes, you can't force your family and friends (not to mention other people) to go vegan by shaming them and their behaviour. But doing what you do and sharing delicious food, showing them that plant based meals can be healthy, responsible and yet satisfying and delicious is a total game changer. And I'm speaking as a meat eating person who fell in love with this channel. Now I'm cooking more vegetarian and vegan food myself, discovering new amazing flavours and I realize I don't really need as much meat in meals as before. Thank you! ❤️

I'm not vegan, but I feel like I operate from a plant-based starting point most of the time, and it has certainly improved my life. 11:30 this is the biggest one for me! I started dieting when I was 12. Lost weight very quickly and started getting attention. And I think that we all knows what a lot of attention does to a young girl. The only thing that kept the attention around me was staying thin and getting even thinner. This led to a ED from which I suffered all of my high school years and most of my studies. After I went vegan five years ago my relationship with food is getting healthier and healthier. Knowing that what u eat didn't make anyone suffer is taking away a lot of that afert eating guilt I felt before. I don't restrict myself most of the time because there is a lot of things I can't eat already (meat and dairy etc) and it's giving my mind this sense of freedom within. It's hard to explain but I noticed a not so small circle of ed recovery folks in vegan community and it makes me think there is something about it idk

I’m currently on my vegetarian to vegan journey. I was pollotarian for many years tried to bring red meat back into my diet felt terrible and decided it was time to go full vegetarian. After making that decision I decided why go halfway and am giving myself a year to transition completely from vegetarianism to veganism. It’s been difficult to cut out dairy (even though my body already hates it) but finding channels like yours has been really helpful in my journey! Thank you

1 and 2 were very true for me when I first went vegetarian and then vegan, but reactions from people I meet today are so much better than they used to be. As more people go vegan/start eating more plant-based, I’ve noticed people understand it and often have experiences with it (“I cooked this vegan recipe from ‘x’) these days. Keep sharing amazing vegan recipes and this will only get better!

You will thank yourself for this great choice you've made when you're in your 60's. You'll see all these people on the "standard American diet" who are sickly and taking Rx meds by the truck load.....but you will be healthy and at your ideal weight and you'll have more energy than you know what to do with. Just make sure you keep a check on your Omega 3 index, & vitamin d & b12 levels. Make sure you include, in your daily meal plans, 1TBSP each ground flaxseed, chia seed, sesame seeds; at least an ounce of walnuts (or any other nuts you like, alternating them); mushrooms; onions; beans; berries; green leafy vegetables. Take a good quality EPA/DHA (Omega 3) supplement, zinc supplement, B12 vitamin supplement. Also a liposomal vitamin c . You'll do great things, I just know it. Peace 🕊️

I quit eating meat in 1981, when in high school, while living in the desert southwest of Arizona....it was REALLY hard back then. It was very rare, and there was little to no support for vegetarianism or vegans. I wouldn't even tell people i didn't know, so as to avoid the strong reactions and judgment - because I would often get a very strong reaction, as so many people thought "only weirdos do that" - when in reality, people that don't eat meat are some of the healthiest people I know. ....funny thing is that at my 30 year high school reunion, I was just about the only one that had the same lean, athletic build that I had in high school.

I started following you and Pick Up Limes because after 22 years of cooking (started at 11), I found myself in a culinary rut. I was always a good and openminded cook willing to try anything, and I have to say, looking into vegan cooking has elevated my cooking game so much. Thank you! I am not vegan, but I went from having meat almost every day to having it maybe twice a week. My body and my taste buds mostly don't crave it anymore.

I have started being vegan this month! My favorite meals are your Buffalo Chickpea Quesadilla and the Lentil Bolognese! I am down 8 pounds and I have never felt better. Thank you for sharing delicious meals and for encouraging a positive environment for beginner vegans!

I get the cheese thing. Personally I found the Buffalo chickpea Quesaidillas on this channel very helpful. Nisha has a vegan cheese recepie for them which I bet is great, but because I don‘t buy vegan yogurt often I usually go by this: 150 gram potato 60 gram carrots 1 medium sized onion some water 60 gram Cashews 1 clove of garlic 1 teaspoon mustard 1 teaspoon lemon juice 70 gram vegan butter pinch of salt 4 tablespoons nutritional yeast Cook potatos, carrots and the onion until soft, soak your cashews, then blend everything together. Works on casseroles, too.

I'm not vegan by any way, we are more so omnivore, but absolutely love vegan dishes, especially seitan too! But the channel has helped immensely to keep wonderful veggies in the diet in different ways and learn how to prepare them. What got me watching was how nice and none judgemental it was!

My g/f and I did a 12 week vegan experiment a few years ago. We ate pretty a pretty healthy low-meat diet before so we didn't feel that much physically different, but we were definitely a little bit "cleaner" or "brighter". It's hard to explain in words the feeling. And after the first week we pooped .... a lot lol. I was always regular, but it went from once a day after breakfast to 4+ times a day :o What we saved on meat we paid for in tp lol

So many great points! I'm not vegan, but I stopped buying meat and mostly eat plant-based foods, and the budget-saving thing is so true! I can buy SO MANY canned beans or dried lentils instead of buying meat. I also like that I can keep them in my pantry and they don't go bad within a few days. Also, I kind of love that I don't feel the need to wash my hands while cooking with things like lentils like I did when I was touching meat and worried about spreading germs.

Excellent information. I transitioned to vegan Jan 1 this year after being vegetarian for a little over a year. It’s been easier than I thought and it really is probably one of the best times to do it with all the grocery options and restaurant options as well as all the vegan KZfaqrs providing inspiration. I am 56 and it was time to start talking about it and to just do it. Ironically my sister passed a away from a devastating stroke on Jan 17 which only made me more keenly aware that time is precious and to do the things that are important and live as intentionally as you described so well. Thank you!

I usually try and modify your recipes to have less oil but sometimes it’s not very possible. You have some of the highest quality Vegan cooking videos on KZfaq, absolutely in love with a number of meals you’ve demonstrated.

I have been a lonely vegetarian (no one in my circle is) for about 15 years, but I have leaned more into vegan choices the past few years. I bought your Instant Pot cookbook that I use on a regular basis. Eggs and some cheeses are my downfall, although I have reduced the consumption. Reading labels (animal rennet in Parmesan 😱) has helped, too. Thank you for your videos.

I was surprised about how it made me think about cooking and how much more engaged and creative I was. I love tofu scramble 😋 It is also easy just to eat mash and baked beans though. I'm often so tired doing shift work at the hospital

I've been vegan for 10 years (time flies!). I'm really glad there is much more information, recipes and meat/dairy alternatives out there now. The tedious Q&A's have become more easy to handle - I can just send them to a channel like yours (which I frequently do, your recipes are amazing). :D And as I have gotten older, it's now easier for me to set boundaries and say "listen, I've had this conversation a million times, is it ok if I just send you some links?"

Love this so much! This was me as well… trying to share my new found knowledge and make others becomes vegan. The ego protective mode really is a trip because once I saw videos of what happens and educated myself, it was easy for me to make the switch. It hadn’t occurred to me that not everyone is like that. Great pointers! Love how you shared fellow vegan KZfaqrs also ❤️ my husband and I watch all of our favorite vegan channels when we have meals together and call you all “our homies” 😆

I like to do vegan recipes but I cannot bring myself to use vegan butter, to me it is margarine. I grew up on margarine and once I tasted buter I couldn't go back to the man made stuff. When I see palm oil in the ingredients I put it back on the shelves. I hope that I will do more and more vegan food in the future. I am glad that you teach us rather than preach to us, your approach is positive and fun. It encourages me to cook vegan meals.

I've been vegan for 4 years, and realise that this video might've helped me from 4 years ago a lot. I've made a similar mistake of "i can change everyone around me" and it honestly broke some of my interpersonal relationships. And i did not expect the hostility. Even now, i experience the judgement, so the idea of preparing stock answers helps a lot! Thank you so much for this video, this was really helpful 🌸🌸

Hello everyone! I am not vegan, but recently I started to replace some of my daily (meat) meals by meals without meat or fish... specially lunch meals because is when I eat alone. I discovered your channel recently and I have to say I love it! I had to give up dairy for health reasons (turns out I am lactose intolerant 🙃 😭) so I set to find ways to eat without dairy and I stumbled on your channel which has been fantastic! I don't eat a ton of meat to begin with so now I'm a fake vegan eating the occasional egg 😂

Nisha I have a recipe suggestion/request - it’s a delicious junk food that’s not vegan. Loaded potato skins. Usually loaded with cheese and bacon topped with some sour cream. Oh my god so good. Never seen a vegan version and I think you’d make a great one!

This year, I set myself the challenge to learn a new vegan recipe each month. In the past 2 months, it's been about 8. :o) It is wonderful when vegan friends come over - I don't have to puzzle over what to feed them. It's a choice of quite a number of dishes. We've found we are now eating about 2 meal meals a week, 2 vegan and 3 vegetarian. Our consumption of meat and dairy has reduce drastically. I anticipate this reducing even more as I learn new recipes. The biggest thing for me has been how helpful vegans have been. Not one person has made me feel bad about not being vegan. People have been sharing tips, and giving encouragement.

i’m a vegetarian, and you’ve seriously convinced me to go full vegan! it’ll be a bit more difficult since i’m in junior high, because last time i brought tofu to lunch everyone made a big deal about it 🙄 but a few weird kids making fun of me is worth it to be better for the environment, and to keep my growing body healthy

I Agree. I’m very rarely hungry between meals, I save tons of money (and rarely procuce rubbish, just top up my garden compost!), I never get a bellyache or heart burn… I just cannot believe how easy it was to go vegan (I am dairy intolerant so my only bad craving was eggs). It was just an afternoon reading vegetarian and vegan posts on Pinterest about cruelty free life…. the next day I was a vegetarian. I later started to try veganism two days per week, then three days per week... I was shocked at how long I had avoided thinking about the consequences of my selfish eating habits. I truly wish I had opened my eyes earlier. I feel terrible about my contribution to the suffering of animals and the destruction of our beautiful planet. Thank you for your tips. Your recipes are wonderfully delicious. I cook one to three of your recepies every week.
