On my recent visit to Raipur, I came across Ya Taj Cooker Biryani where Raj Bhaiya with utmost perfection has been making masale wali cooker Biryani for years now. Three cookers are placed each time on the stove and more than 80 kg BIryani is cooked at once. This process is repeated several times across the day. This place serves Chicken and Mutton Biryani and it is priced at just Rs 60/- and Rs 100/- respectively :)

@@ettayi987 kya matlab how is it diff. Dish ka name Biryani hai to uska preparation bhi unique hota hai. You can’t just cook rice and meat and call it biryani. The same ingredients when cooked in different ways are different dishes. Else there would be no point in naming dishes !

@@chittaranjantripathy4159 1. In biriyani both rice ad meat is cooked differently. Here its the same. 2. Dum is used to cover the meat.. Here also its the same.. The differnce is the vessel... Here it is pressure cooker where the vessel is sealed, whereas in pots it is sealed with atta or foil so that the steam doesnt escape. So technically its a biriyani.👍🏻👍🏻🙏🏻

I know how the majority over here is just worried about usage of MSG. I've worked in the food industry for a good chunk of my life, each restaurant has served some amount of MSG either by adding extra or it might be naturally occurring in some of the ingredients. We must accept that MSG is a prime compound used predominantly by multinational food giants (KFC, Taco bell etc), spice mix manufacturers, top chain restaurants and street food businesses across the globe and the same can also be applicable for Michelin Star restaurants. MSG is not harmful if consumed in controlled quantities over a course of time. It's time to come clean and stop fooling ourselves that our favorite restaurant might not be using it. Hygiene, yes that is still an issue in India because of weak infrastructure and less facilities and keeping things cost effective - still the choice lies with the customer if they want to overlook and are not going to regret their choices later. No disrespect to anyone just some facts.

I see many mistakes . Didn’t wash rice . Ajinomoto is disappointing. Also food color . They can increase the price 10 rupees and use better ingredients. Also washing the rice is an absolute must .

Biryani means - Rice cooked with meat and spices in steam, rice absorbs the taste of meat flavoured with spices. Kachchi Biryani/ degi Biryani cooking process was invented by NIZAM of Hyderabad India during his sultanate. In the degi Biryani cooking process Raw rice and mutton are cooked together with selected spices,during the cooking mutton juice absorbs into raw rice and after complete cooking this dish has a rich aroma and royal taste

@@satinpal3840 Traditionally, Biryani is made in a closed sealed dum, if not dum then at least a kadhai with a lid can be used. No additional water is added and it is baked over low flame. In pressure cooker, you can only cook by using the boiling method or the absorption method, which is used for making Pulao.

He cooked the rice without washing it and then re-used the same dirty boiling water in the cooker and at 6:35 our youtuber says that it is water with lots of flavour. Next time this KZfaqr should taste “biryani” made with gutter water.
