Northern oak isn't too resinous at all, just let it air dry for 2-3 years as all oak should be. We make a decent amount of Swedish oak barrels and get a lot of praise for the quality of casks & wood.

We were reassembling shooks from knocked down ASBs in the 1970s which are still in use today. The staves came in bound in wire in what would have been an American cask, then added to, to make a hogshead. They don't flatten out but are steamed anyway to make the shape of the hogshead, after being checked for cracks and damage.

Had a good giggle when Ralfy mentioned whisky lacking flavour. When I took a punt on my first bottle of Wolfburn online without having tasted it, I was utterly disappointed as it tasted of nothing at all. Next morning I came down with 'the plague' and now that I have recovered the bottle is formidable for what I payed.

Bah, nasty business that ailment, mate. One couldn't tell an Islay malt from vodka! And you don't know if your senses fully recover and when. But at least it's a good opportunity for giving your palate a break. I remember adding an extra couple of weeks, because I wanted to be sure I'm getting everything and being a little afraid whether it will be alright.

Hm... Very interesting! Thank you Ralfy! I did not know the cost of the casks. So it is one more thing to add at the big jump at the whisky prices! You also replied to my question for the oak staves which I had seen at your review 386 (1/2). I did not know that they are not allowed. I was always wondering if distilleries 'cheating' by adding staves. Thanks

To allow inner staves would also be a great environment action since the bigger percentage of oak trees in the world cannot actually ever be made into barrel staves due to its knots. That would enable a broader spectrum of oak species to be used and bring something new to the spirit. Cheers!

i also started to investigate more into the wood aspect, since the quality of casks often lacks nowadays. Cheap wood, reesembled, seasoned with some stuff and put whisky in it and sell it as poor standard or fancy single cask. Meanwhile some rum, armagnac, grappa distilleries buy excellent casks and have amazing managment of them. Tasted a rum, french oak, maybe even some old cognac barrels in there, 11 years old, full of texture and flavour, on the nose even hard to distinguish from an old cognac, on the palate an explosion of french oak, leather, earthy, forest notes, a little bitter, good wood bitter, grape notes, and then the rum, fighting back all those aromas. amazing stuff. And then we get whisky in ex makers marks casks for 5-10 years (which is not really that of a "oh wow..." and sell it for 80/90 pounds... ( the rum was cheaper than that)

I wouldn't think flat packing bourbon casks would be that big a deal since they often make hoggies out of them. But what do I know? PS. My wife and I had a chance to hang with the Loch Lomond coopers for a half hour or so a few years back in their cooperage. They were the BEST! If I recall correctly I even got to rechar a barrel, well kind of. LOL

Bore thousands of small holes in the inside of the cask and coat the outside with a thin coat of beeswax. Problem solved for reusing old casks…

Tried some Glenfarclas 105 recently. Wow, what an unruly youngster. If you can get past the alcohol punch, there is an explosion of dark fruit flavor and some sweet syrup flavor (barely sugar?). At 60% abv it required a lot of water.

Its bad over here in Massachusetts. The single malts from Scotland are just spent. The bourbons are going though the roof. I only buy the barrel strength stuff. Glenmorangie is not the same, the spring bank is not the same. Irish whiskey is dead. The shelves are empty. I know what to buy, but its getting bad. I haven't commented on your channel in years but this is insane. They come out with a good product and hope idiot's won't understand how bad the next offering is. Fad after fad. I can't even get a damn Ardbeg 10............😭

Seems like the struggle is real for many of us. More and more fancy named bottles, no info, 40%, just phoning it in. Some malts still hang in there, but they're up in price by 20-30 % since 2 yrs ago and you have a hard time trusting them with another purchase, cause the quality is a matter of chance (Clynelish anyone?). And any stalwart dram out there is sold out, only to appear once in a blue moon for 30$/€ more than what it used to cost. Look for malternatives, they're out there!

Clynelish was a total dud. I can't believe how weak and boring it was. Spring Bank was good but now tastes like ear wax. Buy as much barrell proof stuff you can find and the hell with the rest of it.

I won a raffle for a barrel (cask) at a meeting of my local whiskey society. It is a Peerless Rye cask that was a local store pick. I don't hear of anybody reusing rye casks the way they reuse bourbon casks. Curious if it has anything like the value of a bourbon cask (300 to 500 pounds according to Ralfy). Not that I would sell it, I'm taking it to my camp to use as a table. BTW, I bought 4 bottles of the rye from my barrel and it is EXCELLENT.

Really appreciate what you're telling us, Ralfy. Thank you! As cask police or cask management is THE issue I was wondering what you think about The Seven Seals Whiskies and their invention to get more out of the casks in a shorter period of time. Would be great to hear your perspective in that.

For quality, I think we should have Coopers. But that makes things expensive. So, a better solution will be to use machinery for normal casks and Coopers for awesome casks. That we can combine the efficiency of machines with the quality of Coopers.

Very informative video as usual. Now I got the idea that some casks might get the saline taste from staying in a container park by a pier for weeks instead of sleeping in a warehouse by the sea xD

Maker's Mark Private Selection stuff uses inner staves and its way better than their normal cask stuff and most of them are French oak and it adds a dimension to the bourbon and has been very well received but nobody else is doing it in bourbon because they are afraid that it's stepping on the toes of Maker's Mark.

Whilst inflation is real, not all of it is due to politics and the geo-political situation, some is solely to the fact that large multinational conglomerates are just greedy…

Hey ralfy, I tried the new Talisker 10y.o. and to my surprise, it was very good. No direct comparison yet to earlier batches but I believe sherry cask influence more toned down, but in return improved mouthfeel and taste, more fresh, more crisp. Would be interested in your take on it. Cheers!

Coopers are the SHIT..thank you for taking the time to acknowledge this vital human cog in the production of our beloved Uisge..& to any/all distillery principals or members of the Board of directors out there lookin on: the Fn vessel you olace your new make in DOES matter & IS noticed. Yes, costs have gone crazy skyward, yet still History, & your portfolio of investments 20 years on from now, will NOT judge you kindly if you choose the solution of lower input costs now in the hopes that it will provide you greater marginal gains down the line. & oh yeah, by the way, the liquid that finally comes from that no-brainer cheaper-at-the-time container will be a far far cry less valuable than what could have been, for 1-2 hundred pounds more/cask on the front end.

Maybe I'm stupid but can't the staves be marked (numbered) before a cask is disassembled so they can be reassembled in the same arrangement, and wouldn't packaging the staves in airtight sealed plastic, help to preserve more of the quality of a cask during transport ?

Dear Ralfy, thank you very much for the top notch information you share with all of us, Im just knew in this monster industry and starter to work 3 months ago in Springbank distillery, and when the clients come for the tour, or buy or even to enjoy a dram in the bar always question if they know you at least 50% they know you. 2 questions please do you know how much left of the previous resident remains in the cask? and what book can you recommend me in order to know more about Whisky and more? The SWA never "banned" anything; they just threatened to go to court over it. The SWA ISN'T a regulatory body, so it can't "ban" anything.

It's going to come down to cost and available barrels. Low supply and high cost, the industry may change its mind.

Hi Ralfy, you mentioned prices for some 18 year old whisky have started to go up to a point where most wouldn't buy them anymore. Gut feel how far off before this starts happening to 12/14/15 year old whisky do you think if at all? I found the ancnoc 18 and 24 at good prices recently so decided to buy them before I start questioning their value, thanks for the advice!

@ralfydotcom casks: instead of buying US bourbon casks, are there any Scottish distillers that make their own casks, make their own bourbon, and then use their own casks to make Scotch? If not (as I’d guess), what’s stopping them?

How often do you drink a espresso and let a piece of dark bitter chocolate with your whisky? Are there better/worse types of whisky to combine it like this? For me its a sherry cask that makes this work. The taste of raisin, dried fruit is what i think marries best with espresso/chocolate.

If it’s a cheaper whisky, fine. But if you’re paying for an expensive whisky you’re (in my opinion) diminishing and altering your ability to taste just the whisky itself. Personally I won’t eat or drink anything with any bottle that costs over $29, but that’s just me.

Ralfy what do distilleries such as Deanston do with casks which they have aged whisky for 18 years? Are they re used and do they have a service life?

They would be reused for sure. There are plenty of second filled third filled and in some cases fourth filled barrels although they must be good and active enough.

ralfy, how can you tell if you think you have a bad whisky or if it's just that you don't like the taste, but someone else would like it. Bizarro ralfy likes it and real ralfy doesn't. A little off the topic of casks but I have questions. I do have something about casks though. I have a whiskey (bourbon) that was quite expensive but tastes musty like the cask may have been moldy. It has plenty of vanilla and almond but a musty finish. What think ye-

Is it double digit age stated? I find that note in bourbons over 8 years old. Just the wood influence. The barrel note can be sour, sweet, musty..bbq. Wonderful to see its influence.

Give it a go. The internet has home kits to further age your whisky. From charred oak spiral inserts for dropping into your bottle to pumps that have different wood inserts that you hand squeeze your 2-3 ounces of dram through to "rapid age" it. Your idea wouldn't be the strangest.

Give me 6 months on the job and my 20 years in the wood biz and I can make cheap water tight casks out of flat packed bourbon barrels. Not even joking... And inner staves.... this is literally the easiest way to add flavor to Scotch CHEAP
