According to How to Cook That, the chocolate mousse thing can work, but the ratio needs to be a LOT different. There needs to be a lot less water.

that cream cheese thing is called labneh :) next time you can wrap youghurt the same way you did, put on stainer and put something heavy on it (like jar with water) and let it sit overnight and all water will go

As someone who grew up with maple butter, I'm happy you loved it so much! If you keep mixing, it becomes thicker and as some point it becomes maple sugar. It's so good in hot drinks, on peanut butter toasts and literally over anything. Maple syrup is good when you cook it with eggs or sausages.

For the maple syrup one, temps when working with sugar are not negotiable. Lol. It didn't set like the one in the video because you didn't reach the right temp. And the chocolate mousse with just water and chips would likely set if you used a lot less water. Can't promise it wouldn't still be grainy though. Not without using hot water. That might work.

The cream cheese is something traditional in my country-Bulgaria. My grandmother and my mom use a muslin cloth, you hang it overnight to drain all the excess water and can be used as spread, making tzatziki or if mixed with icing sugar and whipping cream(optional)- for cakes.

For anyone wondering, the chocolate mousse was developed by British chef Heston Blumenthal, I've seen him demonstrate it, but he uses actual chocolate, not choco chips which has different components, and he whisks as the chocolate mixture cools.

The caramel icing didn’t work because that particular store-bought stuff doesn’t have cream in it. Some of the more expensive ones do, just look on the ingredients list and if it just has sugar, cream, and just a couple of other things (or if it’s homemade caramel) - it WILL work just like the video. The cream in the caramel is what makes it turn whipped, thicker, and more like icing. ❤

Raphael, scientist here, double walled glass containers are to maintain temperature, not change it, so it insulated AGAINST the mousse cooling. Try again in a single walled container for 9 hours for better results

for the “marshmallows” the confectioners sugar makes it easy to come off the parchment as well as the top layer makes it easy to cut.

The omurice (omelet) is supposed to be cooked quickly over high heat, and its kind of necessary to do it with the chopsticks. You would pour in the egg mix, quickly shir to create the small curds you see on the inside, let it set for a second, then fold as shown in the video. Fun fact: eggs dont have to be hard scrambled to be cooked through. The consistency of an omurice may be creamy/wet but it is cooked

The marshmallows seem to be more of a taffy consistency. I wonder if it needed to be mixed longer? I love your videos and always get a good laugh along with you. Watching you try to cut the marshmallows was the best

I think the maple butter didn't thicken bc you really do need the bowl of ice underneath of the syrup to keep it cold enough to firm up again

You need to use home made caramel sauce as that contains cream and that's what makes it whip up

You should've used wax paper for the marshmallow fluff. Parchment paper isn't as waxy and is meant for cooking with in the oven. Wax paper is for room temperature or the fridge or freezer. It's easier to get sticky stuff off of wax paper. Also, the fluff from gummies is actually more of a taffy than marshmallows.

The mouse needed like 80% less water and the marshmallows needed more whipping to become fully mallow texture, also you need to use alot of icing sugar. The trick with the egg is to use a smaller pan so the omelette is thicker and cook it on a high temperature for a very small amount of time

When I was a child, we had no money. My grandmother always brought some sugar from her job, and we burned it on the stove. That was the only candy we could afford and it was amazing. Also, if you know how to cook, I advise you to try boiled condensed milk. It's incredibly tasty. But be careful because the can may explode.

I’m pretty sure you mess them up on purpose, but it really makes me giggle every time. You are a delight to watch. Also you needed to whip your gummies longer. I fall for it and laugh every time, and I think it makes the videos funny and more interesting. The yogurt cream cheese is actually a yogurt cheese staple in the Middle East called Lebneh. It has found its way into some American stores already and I suspect it will become more popular as people get exposed because it is a lot healthier than typical cream cheese

To make cream cheese you should put the yogurt in a muslin cotton towel (that is very absorbent) for one-two nights (depending of how dense you like yogurt). Fun fact: Druze people wear muslin cotton towels on their head and also use the same fabric (of course not the ones they put on their head hhh) in making Labana a spread thats very similar to cream cheese.

It's actually called labneh&it's way easier if u wrap the yogurt the way he did&put it on a strainer over a bowl&put something really heavy on it&let it sit overnight and it will drain all the liquid out&u can season it with all sorts of stuff,look up how to make easy labneh at home&u can get exact directions if mine weren't clear, God Bless 🙏🏻

Hey! We sell this cream cheese in Lebanon it's called labneh, we put olive oil on top to reserve it. In turkey they call it suzme yogurt.

Another video I watched with full enjoyment the whole hour ❤ thank you for making these Raphael! Also, marshmallows are super to make as is! Just gelatin + water + sugar(alternative) :) you heat it to a certain temp and then whisk tilk fluffy line pan with icing sugar let set cut and your done!! Also if you want marshmallow fluff you just use less gelatin!!

😊 48:59 I agree. If the Carmel whip icing works with a good quality , not necessarily expensive Carmel, then go for it . And also maybe use a slightly thicker store caramel sauce.She definitely used a thicker Carmel sauce . Try it with a good, thicker Carmel sauce. If you use a thinner Carmel, you definitely would have to whip it longer, but use the thicker store Carmel sauce.

Dunno if you know this but if you take regular sugar, and whizz it up in the blender, you'll get powdered/icing sugar, which would have kept your marsh gummies from sticking to the wax paper. ^-^

Raphael, the caramel didnt work because it was too liquid. The homemade one was a lot thicker. I make this in my patisserie and you need more sugar than cream to work

Next time put powdered sugar on the bottom before pouring the marshmallow, and then dust the top before cutting. It really helps!

Those French biscuit things just look like corgi butts to me. (Never been to France or been exposed to a whole lot of French baking and such, outside from a wee bit on the British Baking Show and other cooking shows, but I know it's not the same as actually being there.)

The powdered sugar is for the purpose to keep it all from sticking that’s why when you buy in the store they are coated in powdered sugar but they do not compare to homemade
