after turning 64 retiring had mild strokes.. divorcing after 41 years.. I had not canned food in 15 years.but who is canning now!! I am canning now .. thanks for your video's..god bless.

I can so relate, I love to pressure can too, nothing more satisfying than that "ping" of the jars when they seal. Good job!! 👩🏽‍🌾👍🏽🙏🏽💖🧡💚💜

She said salt and lemon. Jars were clean and the heat in the pressure cooker will kill anything that may be in the product. She allowed the cooker to cool. As long as lids pop everything will be fine to store. The people who were being negative weren't even listening.

You are very blessed. Keep preserving those tomatoes! Next years harvest may be scanty. The Italians preserve lots of tomatoes during a good harvest for this very reason. You go, Girl! P.S. I plead guilty! I am a canning addict too. :). My kiddos think I am nuts.

Never have enough tomatoes. I had extra, I cored and blended them before putting in a food dryer. Makes the better powder for thickening. Yum

Tracey. I had to learn this a couple of years ago myself when I broke my wrist and my husband helped me cooking. The back right hand burner where you have that pressure cooker, is the slow burner. The right front burner is the hottest burner on a stove. The left ones both burn the same. I just never knew that before.

The large right front burner is sometimes called a “blast burner” and gets the hottest (also good for searing meats). The small right rear burner is called a “simmer” burner and is great for slow cooking, melting chocolate or wax (double boiler). The two on the left are the same and are standard general purpose burners. You can also use pan size to determine which burner to use. I do love my gas stove and I always choose a burner for each task. Happy cooking and canning!

I have made sauce and didn’t peel. After they had cooked down a bit I took the plunge mixer after them. It chopped the peelings so you couldn’t see or find them. I then continued cooking til they were the consistency I was looking for. Salt was the only added ingredient. Sterile jars and hot water bathed for twenty minutes. Acidic tomatoes did great.

I am also a canning addict. I have to listen to you as I am working so I missed the purpose of using the pressure canner rather than hot bath.II imagine when we die, the kids will have tons of food and probably throw it out.

I raw pack and fill with tomato juice. Water bath can. Makes nice addition to add entire jar to recipe. Very rich tasting.

Not sick of hearing about canning . Did my first batch today . Salsa and just plain tomatoes and some pickled eggs . Been surfing from one channel to another looking for easy ways to do this without compromising our health . Thank you !

Gotta admit, I canned tomatoes this way in the 70's and 80's...just changed the standard directions...and of course it worked like yours do. I was waterbathing, not pressure canning. Have a tip for you...just saw this on Deep South Homesteading. Wanda uses drying pads to put her jars on. Gets them at dollar store

Funky chicken and wiggle and giggle, hahaha, love canning stuff, I made so much sauce end of last year I was set for 2 years lol. Love hearing the popping sound when they seal, music to my ear 😂. It's so hot here in Ontario too. TFS, have a great Sunday 🤗💕

I enjoyed this video and appreciated all the safety tips. I have never done any canning myself but remember my mother using her pressure cooker for meals. You can't be too careful.

I will never get tired of seeing you do tomatoes. I live in Manitoba and my garden was terrible …..everything was terrible. Last year and years before I had great garden stuff, dont know what happened

Hey Tracy I know this was 2 years ago but I forgot how to do my tomatoes in the pressure cooker where it's been so long cuz I usually water bath so I done it your way they look good thank you so much for these videos that I found I just found it today because I really forgot how to do it in the pressure canner I got for pressure canner there's a lot of things I do it pressure canner but I have not got the ball book when my house burnt down several years ago I lost my Ball canning book in the fire so I never got me one back did not have the money but anyway I'm glad I had your video thank you so much for these videos

Hi Tracy, I don't know if you have thought about it but you can take the skins of tomatoes and dehydrate them and have tomato powder and it last forever if you put it in jars and have a dark place to store them. Really great to have when you are not wanting to use your tomatoes. Just a suggestion 🙂

I did up 14 litres of tomatoes tonight by raw packing. I peeled mine and quartered them. I put in the jar: 1/2 tsp citric acid, 1/2 tsp salt and 1/4 tsp calcium chloride. The acidity was ok, but it's a little tangier than commercially-canned tomatoes, but they were nice and firm withe the calcium salt. I think next time I'll reduce the salt even more. Thanks for this great video.

Hiya from Scotland UK. I have just found your channel. I am new to canning. I bought a Miro 22 quarts pressure canner, so I am at the right channel to learn how to use it. I started growing my own vegetables and have not enough freezer space. That why it have taken up canning. The only negative side is that canning stuff is very expensive in the UK and even with the added tax and postage it is cheaper to by the cans from the states. I could not by a pressure canner in the Uk so that came also via Amazon.com. I have subscribed and hope to learn a lot from you. I have a lot of runner beans so they need pressure canning, so I will look if I can find a video about that. Eveline

Maybe I’m nuts!! I sterilize my jars, while roasting my whole tomatoes with salt. I scored all my tomatoes skins, because I leave skins on for best lycopene. Then when the jars are warm and tomatoes hot, I plop them in the canning jars juice and all, use a wooden muddle and get out the air. I never fill-over the the line where the rim starts, Screw hot lids on tight and water bath on low boil for 45 mins. No lemon, no water, no mold, no pressure cooker 🙃

You're cooking your tomatoes before canning. You can dump hot sauce or stewed tomatoes into a sterile jar and leave it under a blanket over night and you don't need the pressure canning process because you're doing a different method of pasteurisation.

The acidity is why they use lemon juice. Just depends on the recipe. Some tomatoes are acidic enough, but when you add onions, peppers etc it alters the ph. So for safety, use a teaspoon lemon juice for a pint and 1 tablespoon for a quart. When a recipe calls for vinegar for instance, sugar cuts the taste but the vinegar is for the keeping you from getting food poisoning. Just follow trusted and true recipes and you should be safe. You can water bath can raw meat, just needs 4 hours lol

I didn't have enough tomatoes this year to can any. 3 things I do. run a butter knife or spatula down the side of the glass to let air escape before sealing. It's ok to set the weight on the pressure port when you turn it on. Been doing that for 30 yrs. Believe me, you will know when it begins to steam. That weight will not prevent you from knowing. Never store the canner long periods of time with the gasket in place under the lid. When you close the lid, it puts down pressure on the gasket and if it sits like that over a year or more, it can deform it, or if it's longer can dry out (old type gaskets) and crack. on canners with rubber or silicone gaskets, you can put them down in the canner when storing. Love ya, just my 2 cents. Love what you are doing. Keep it going in Nova Scotia.

Hi...... I,'v always canned my tomatoes raw. Quicker, taster , Jam the fruit down in the jar......I also add 1/4 t of canning salt, sometimes a teaspoon of sugar. fast and easy when you have as much to do as you do..........don't forget to get the air out.

You could freeze them also. When they thaw out the skins will have started to come off making it easier to can. You just need to have the room in your freezer.

You don’t have to pressure can tomatoes. Just raw pack with no water (they make their one) and process in a regular water bath.

You should never put a 100 lbs of anything on your freezer lid ! It can compress the gasket and push the hinge adjustment out of wack ! Then the lid won't close properly the front edge will not close and seal because the back edge is squeezed by the hinge adjustment. Good video !

FYI: The reason for the bit of space left at the top of each jar is to keep each jar from "overflowing" into the pressure canner while under pressure. Due to the fact that pressure will go up and down a bit during the canning process at any given point because no stove is perfect, whenever higher no matter even if you measured carefully the space you leave in the jar, one is likely to still end up with a hair of can liquid in the canner's liquid.

When you pressure can the time at temp and proper pressure is approx 25 minutes for qts. But there is extra time to get the pressure cooker vented and then to build the 11 lbs and then a long cool down after the required time. So the total time is well over an hour before you can remove the jars from the pressure cooker. When I do a 7 qt batch it is 3-4 hrs total. But you can be filling the next batch while your waiting on the pressure cooker to do it's magic. .

Hello, great video :) It is good to have the ability to either water bath or pressure can. I do have one quick question. Does the 2T of lemon juice per quart jar alter the flavour of the tomatoes?

You can substitute 1/2 teaspoon citric acid for the lemon juice per quart.

You don't need lemon if your pressure canning. You only need the lemon if your water bath canning. But it changes the flavor of the tomatoes... use citric acid instead. If your using heirloom local tomatoes you don't need lemon or citric acid the tomatoes will have enough acid to water bath. If you buy the tomatoes or don't know where they came from then you add lemon juice or citric acid to bring up the acidity for water bath canning. Not needed for pressure canning

Did you add the salt and lemon juice? You didn't show that if you did. I cold pack all my tomatoes but I do scald the skin off first. Wish I had ready access to so many tomatoes, you are blessed.

You make it look easy. So the tomatoes are jammed into the bottle with the skins on? any citric acid? any salt? And when you were going to re-load the canner, the water was hot and the jars not, ...is that ok? or do you empty the canner for fresh water?
