Tex Mex is just that, imo it was born out of necessity based on local tastes. SoCal Mexican food is in the same boat like Tex Mex it comes from more rural tastes. American Chinese on the other hand came about in large city's and was more opulent for lack of a better term. Never sat right with my pallet, too rich. I assume it's kinda just how you grow up. But what the hell do I know, I don't get excited for Carnitas until I see the big bottle of Coke dumped in. Not sure if that's a SoCal thing or not.

As an American Chinese, I find that Chinese who claim Americanized Chinese food is not Chinese are condescending and arrogant. To them, I would argue that that any “authentic” Chinese dishes with potato, corn, or tomato are not authentic since those vegetables are native the New World (the Americas). Another example is the various lobster dishes (made with the North Atlantic lobster, the one with claws) found in Chinese restaurants in North America, China, HK, Malaysia, etc. Those dishes are definitely Chinese (Cantonese) even though they are have been created in the last few decades and in America. Even today, new styles of the lobster dishes are popping up (e.g. with cheese sauce). To end, I say try and enjoy the food, whether it is authentic Chinese or not.

Sean's Interview: (1:10) There's a considerable difference between eating Chinese food in America vs. eating Chinese food in China. (1:20) I believe every state's Chinese food got englishified to an extent where if you go to any Americanized Chinese restaurant, even though Chinese Chefs are cooking the food. (1:31)Their vegetables are still the same, and it's usually the people's language of the food, the interpretation of it, but the dish will mostly remain the same. (1:38)Like Orange Chicken, General Tso's Chicken Lo Mein, or other stuff. (1:45) So, like in every American Chinese restaurant, it seems like there is an unusual connection to making the same dishes. (1:51)However, if you eat Authentic Chinese dishes in a Szechuan restaurant (might be wrong here), there is northwest(西北菜) dish, northeast(东北菜) dish, Guangdong (广东菜) dish, Cantonese (月菜?) dish, or like shanghai(上池菜) dish is also good. (2:08)It's distinguished very well, and there is an immense diversity between the foods. (2:11)Chinese people's instincts won't call every dish Chinese food (2:16)because we understand that food needs to be classified by the place the dish originated. (2:28)However, a Chinese person opening a Chinese restaurant in America will subject you to a segmentation(分割) or a chai xi de chai (idk). [I'm having a hard time understanding what he's saying @(2:39)] (2:46)He summarises that overall American Chinese restaurants food is essentially the same. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⣀⡀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⢀⣶⣿⣿⣿⣿⣿⣄⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⢀⣿⣿⣿⠿⠟⠛⠻⣿⠆⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⢸⣿⣿⣿⣆⣀⣀⠀⣿⠂⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⢸⠻⣿⣿⣿⠅⠛⠋⠈⠀⠀⠀⠀⠀⠀⠀⠀♫never gonna give you up⠀♫⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠘⢼⣿⣿⣿⣃⠠⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⣿⣿⣟⡿⠃⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⣛⣛⣫⡄⠀⢸⣦⣀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⢀⣠⣴⣾⡆⠸⣿⣿⣿⡷⠂⠨⣿⣿⣿⣿⣶⣦⣤⣀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⣤⣾⣿⣿⣿⣿⡇⢀⣿⡿⠋⠁⢀⡶⠪⣉⢸⣿⣿⣿⣿⣿⣇⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⢀⣿⣿⣿⣿⣿⣿⣿⣿⡏⢸⣿⣷⣿⣿⣷⣦⡙⣿⣿⣿⣿⣿⡏⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠈⣿⣿⣿⣿⣿⣿⣿⣿⣇⢸⣿⣿⣿⣿⣿⣷⣦⣿⣿⣿⣿⣿⡇⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⢠⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⡇⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⢸⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣄⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠸⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⣠⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⡿⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⠃⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⢹⣿⣵⣾⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣿⣯⡁⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Translation by @IndiiSkies Time taken: ~ 4 hrs sorry for the rickroll :)

I actually like American Chinese food if it's made well (as opposed to what you get at some fast food places). But I also understand why many Chinese people would criticize it. It's not really because of the quality of the food, but rather because most people would tie their personal identities and feelings of nostalgia with the food that is named after their nationality. So most people are not really scrutinizing the food. They are just homesick. And it really felt terrible when some of my American friends asked me why I didn't like Panda Express cuz it's soooo "Chinese" (lol). From an objective perspective, any food with any origin can be tasty, whether it is Amercianzied or not.

I think it’s dumb when some people use the argument against Americanized Chinese food “that it isn’t authentic.” I love Americanized Chinese food and I know it’s not authentic but that doesn’t really matter to me if it tastes good. It’s also frustrating when some people think that Americanized Chinese food is the only type of Chinese food there is, I know it’s probably not their fault but it is annoying cause they are two different foods and only have some similarities.

China has such a diverse and colorful array of foods that Western society would never consider as something they'd eat, let alone have it within a 6 foot distance of them. 😂😂 They have different fruits and vegetables, rely on insects as a source of protein, raise a range of livestock and seafood including many types and cuts of meat that are different to what's common in the US, and in general just have an entirely different ecosystem to source food from. Because of that, I know that there's no way that what we see on our menus is what the average Chinese person is eating. I do find it odd that it's so difficult to find authentic Chinese offerings more commonly seeing as our culture has been in search of foods that are more and more uncommon to us. Maybe the average American's palate, or mind, isn't ready for that jump just yet? Maybe that's something to come in the future to add to the history of American Chinese food??

The reason American have American style Chinese food is because several reason. First, the first group Chinese who came to American are illegal immigrant from southest part of China. Mostly, they're from Fujian, Guangdong, Taiwan, Hongkong. Although Hongkong Taiwan had try to split and had been rent to Britain or Japan, the people of these two place are from Guangdong and Fujian, not from local people live there million years ago. These group people go to American illegally, and when they find a way to become legal, their relative come here. These group people first made American Chinese food. At beginning they did regular Fujian or Guangdong style, basic level home style cooking to American people, and American don't often like that kind style, then, for commericializing their business, they had changed the taste. They made food become either more salty, sweet or sour, with no bone, cut food as big pieces. Those are very easy cooking compare to original way of cooking, however, that kind style more adapt to early American taste. Some American have a more tough taste, you can see the Pizza in American unless in big city, the floour is not very refined. It taste like no taste flour with burned carbon with a chaotic, unregulated taste. Beside tough taste, also is strong taste, American prefer a stronge tast in sweet, salty, sour. Those Chinese food is tough, rough compare to Chinese food in China. Recently year, lots of exchange students, Rich businessman from Chinese go to American, they made some new style Chinese food in American, they are not same as Chinese food in China, but more similar to Chinese food in China. Mostly they are Sichuan style, Shanghai style, Xian style Chinese food with a little higher level of cooking skill. If make them in numbers and classification Chinese big restaurant style is 10, Chinese restaurant style is 7, Chinese basic home cooking is 4, bad home cooking is 1 There style will be Original Fujian Chinese food in American with level 3 skill Americanized American style Fujian Chinese food with level 1 skill Americanized Chinese style Sichuan Chinese food with level 3-5 skill Americanized Chinese style Shanghai Chinese food with level 3-6 skill Americanized Chinese style Xian Chinese food with level 3-5 skill A level 10 cooking need know how to cook exquisite food with good taste, how to plating , remove impurity, cut exactly regular. Can cut very thin and regular. Knowing how to use different species, taste, tools, cooking skill. Make some novel and good taste food and some famous tradition fare. Put exact amount of ingredient, control the fire and time. A level 7 need know how to cut regular, thin, have a good and exquisite taste, how to use species, how to use different taste. Need to know common cooking skill. Put exact amount of ingredient. A level 4 is required good cut skill, can make a fare follow the instruction. Know how to fried. Know how to use ingredient and not put too much or less. Can cut food to small and regular. A level 1 is knowing how to fried, how to put ingredient. Can cut food in big piece.

Chinese takeout IS authentic Chinese-American cuisine, and I like it a lot more than Chinese cuisine.

It's like what passes for "espresso" in America has nothing to do with real Italian espresso in Italy. Real Italian espresso is syrupy, with no bitterness, thick crema and perfect balance. In America, it's either a watery and huge coffee with just a little bit of foam on top passing for crema, or a super-extracted sludge that is so bitter as it be undrinakable, these "4th wave" espressos from fancy coffee shops. I guess Americans just get a concept created by another culture that they are unable to create for themselves, and "make it their own" with their typical(inferior) American tastes.
