If you watched our travel vlogs, you might remember that we found a few really good dishes on our recent trip that we wanted to replicate at home. One of the dishes that stuck out in our minds was a delicious Delicata squash and lentil salad we had at Little Eater at North Market in Columbus, Ohio. The list of ingredients seemed simple enough, so we decided to try it out!

Hi from Australia! Love this. I’m the only vegan in the office and we have Wednesday lunches where we all take a turn making something. This term it is salad since it’s summer here. I made it and OMG, a new-to-me squash! And I finally learned how to seed a pomegranate, (underwater, who knew?!). This was delicious the day I made it, but it was outrageously delicious the next day. WOWZA! 😋

5 out of 5!! Felt like I hit the jackpot when I realized I had all the ingredients for the spice blend! Just have to get some delicata squash, pomegranate seeds...oh, and some fresh mint (mine's under a foot of snow). But it's going to happen!!! I made this today for my sister. I wasn’t going to try any but I am sure glad I did. The aroma in the house was wonderful. And the food was amazing. We did use a mixed blend of lentils that she had on hand. But that lemon juice everything was wonderful. I will make this again. I bought another Delicada squash.Thank you so much

Can't wait to try this. I just bought a delicata squash! Sumac is wonderful! It is a little sweet, tart & savory at the same time, if you taste it by itself (who does that!?). When used as flavoring much of this distinction recedes into the background. Like nutmeg it adds something you cannot quite put your finger on. It can be hard to find. We have good middle eastern groceries around here (Houston) In many middle eastern restaurants it is on the table like salt & pepper. Sometimes your hummus will be topped with it, even though you might think it is paprika. It adds an interesting "note" to salad dressings, too. There are recipes for toasted chickpeas that include sumac. It goes really well with mint, lemon juice & whole grains. It does unusual things to a tomato salad if you include pomegranate seed and/or syrup. It is the ground dried berry of the (wait for it!) sumac bush (or tree)!

Nice thing about Delicata squash is you don't have to peel it. Simple prep as in the Krock's video and you're good to go. Also, if you take the time to clean the seeds you can roast them similar to pumpkin seeds. The silicone mats are great.

Thank you for this recipe. It does look really delicious just as it did in Columbus. My son and I did go to that place in Columbus and had the best time. I’m going to tell you we shared a Banh Mi sandwich was legit. Next y’all have to go to the Westside market in Cleveland. It is right by the rock ‘n’ roll Hall of Fame!!!!!

Penzeys has sumac! And it works well _in combination with_ lemon! Gonna make this as a Thanksgiving side--I think the astringent elements would be a nice contrast to the heavier textures and flavors of that meal--and I thank you for troubleshooting this recipe, and for posting it : )

What a lovely dish! Even though I don’t have an oven to roast the squash, I look forward to trying this recipe. Thanks for sharing! BTW, you might want to consider adding sumac to your spice rack - it is great on soups and beans!

Hello guys, from a fellow saint Louisian! I’m so glad to have stumbled upon your channel, I’ve been eating a wfpb no oil diet since past 2 years. I watched a couple of your videos, you have such a pleasant temperament. Also love the recipe ideas! Since I’m the only one in the family eating this way, it gets a bit challenging. I’m the cook so the kids and hubby eat what I cook but they also like having their fair of junk! Anyways, keep up the good work and wish you the best of health and success ahead!

Looks delicious. Will try it for sure but I'll have to use something in place of that squash, I know I won't find it here. As for sumac, do not underestimate how much you can incorporate it into plant based recipes! It adds lots of good flavor - it is a popular middle eastern spice and goes well in salads, also in baba ghanouge, and there is a Swiss chard and lentil soup with sumac as the major spice along with tons of garlic. It's worth getting and keeping on hand.

I love different squashes, but I saw Delicata squash for the first time in Trader Joe's a few days ago.I never tasted it before. I would eat it hot. Looks good! I've been doing plant based for 41 days and lost 21lbs. so far!

Thanks for this! I had some delicata squash in the house and all the rest except pomegranate seeds, so substituted diced apple and that turned out really well. Also around here, the pomegranate seeds are crazy expensive. Easy to make, so yummy.

This sounds delicious. I love anything with lentils, pomegranate seeds, or mint, so all of them together may be Nirvana. Also, I think this would be a great recipe to try with the new Honeynut squash that have been at the market lately that also have a thin, edible skin and are about the same size as a Delicata.

I just tried your potato and spinach dealio Jessica. It was really good. I think that next time I have it what I will do is leave a little bit of mashed potatoes in the bottom of the mixing bowl. Throw my spinach in and mix it for a minute. Then I’ll use the other mashed potatoes for dinner. If there’s any more left over put them with the spinach potatoes. And if that the next day warmed up. But I forgot have you ever had Irish colcannon. It’s potatoes kale and onions mixed up with other stuff you don’t have to put in it like milk.

Love the look of this, might use a Butternut squash instead (cos I can get them at my local ;-) ... Definitely come to Australia for a holiday its an amazing place and please don't skip Western Australia - its often over looked by tourists but we have so much going on here in the west and the best beaches!

I'm so lacking -- all I've ever done with (Winter) squash is add butter (vegan, now), and S&P. Frankly, I think one could add any herbs and find one's mouth exploding with taste. Mint, here I come! TY for your excellent ideas 💓

I was thinking that gumbo filé is sumac. Checked out my little box of filé, and it turns out it's sassafrass. Same thing? (I need to google.) This recipe sounds AMAZING; can't wait to try.
