This traditional Haitian recipe is everything you need for an island vibe side dish!
Let's Cook:

4 tablespoons of oil (may use olive oil, vegetable oil, coconut oil)
2 tablespoons of epis (may substitute with 3 garlic cloves and 2 green onions sprigs smashed or blended)
3 cans of red or kidney beans, rinsed and drained
2 cups of coconut milk ( canned, caton or fresh unsweetened)
2 cups of water (4 cups of water if you do not use the coconut milk)
2 chicken bouillon cubes ( like Knoor, Creolito or Maggi)
Additional salt to taste
2 cups of long grain rice like a Jasmine or Basmati ( you may choose to rinse your rice prior to cooking)
Bean substitutes:
Lima beans
Black beans
Pigeon peas
Black eyed peas
Try it without beans
