I'd say that more smoke coming off the oiled steak vs the oiled pan is evidence that the oil on the steak reached a higher temp faster. Sort of makes sense since the oil is already spread out in a thin layer on the steak as it hits the pan, yet the oil pouring out of the bottle into the pan hits it initially in a thick pool. Then adding the oil free steak to the oiled pan suddenly cools down the oil and the pan, so the oil doesn't have a chance to burn. The bitter notes on that oiled steak are coming from burnt oil.

I only came here as I'm about to cook a steak, and I wanted to know, but , I've always oiled the pan, I've never oiled the steak. It's pretty much the consensus of what I thought ...oil the pan not the steak. Thank you for being here, so I could make a choice that I already had the answer but wanted confirmation.

Definitely prefer my steaks done in cast iron, hot and 2-3 mins per side depending on thickness. Grass fed, longhorn rib eye, clarified butter and a splash of high smoke point oil. Oil in the pan, generous to the point of being able to spoon it over, flipped once. Very tasty!

I usually cook my steak in a cast iron with oil and butter... enough to be able to spoon over the steak... about 3ish minutes per side, depends how thick the cut is lol....i like my steaks med rare 😊😊😊 thanks for the great video 😊 ❤Annie

Smoke caused by Residual oil in the pan with the oiled steak? If you put oil in the pan then the entire pan and residual elements are also covered with oil.

Grill skillet are the Best if you are not able to have grill. ANYWAY, I Love the grill with mesquite the taste over inside or has grilled on gas grill instead. Broil controls the mess and smoke of cooking inside cooking and you have to have a timer to flip the steak in the oven.

U dry the steak but then put the dry side down where the wet side was on the plate. So defeats that procedure

My thoughts: difference in smokiness while cooking could be due to the amount of oil on the steak. I was thinking you should have measured the exact same amount of oil for each steak/pan. Re-watching the video, it appears you used more oil on the oiled steak than you did in the oiled pan. Bitterness might be caused by the steak itself. They look similar, but were they the same cow and slaughtered the same day? Perhaps using one steak, cutting in half and experimenting with two halves might eliminate another subtle difference. Next experiment - Cook a steak with an oiled pan and compare to a steak cooked in a pan without oil.

I think pouring oil into the pan would drop its temperature a bit, while a steak (oiled or not would cause the same change...) so the oiled pan starts a bit cooler than the dry pan with oiled steak. Send me a big box of steaks and I'll check it out for you :)

Good question, and for something like Wagyu, definitely wouldn't use any oil as it releases so much....maybe Prime also.
