Namaste, We are Shirish and Pooja
and Welcome to a "Malvani Masala" Special Episode of ‪@RedSoilStories‬
We were asked by many of you to show how to make tradtional malvani masala, hence we decided to prepare authentic malvani masala in our style. My mother had come here to make this masala. Malvani masala is a unique combination of spices and red chilies ground together to get a flavorful, aromatic, spicy masala which is a daily need of every Kokani/Malvani household.
Malvani Masala consist of more than 20 spices and 2 or 3 types of red chilies.
To prepare this tradtional malvani masala you have to dry these chilies for 4-5 days in the sun and then roast the spice, mix everything and ground on a grinder "Mirchi Kandap Machine"
The process is time consuming but since the Malvani Masala is a need of every spicy malvani cusine, this masala is prepared once a year and stored in an air tight container.
The spices and red chilies are mostly same in every variety of Malvani masala, though region wise or taste wise one can increase or decrease the quantity or number of spices in the masala.

Unbelievable. I have no words to express. The beauty of Konkan, masala preparation and then your yummy tender cashew chicken curry everything stole my heart. In villages people are so very helping in nature. The sound of the chakki/ grinding mill brought so many of my childhood memories alive once again. मूळ मालवणी मसाल्यात शाहजिरे नसते.अलीकडच्या काळात ते add केलं जातं. तरीही अजूनही सावंतवाडी भागात शहाजिर नाही वापरत. मी ७२वर्षीय आहे आणि माझी आई हे बहिणींना आवर्जून सांगायची.त्याने गुळमटपणा येतो .

Great preparation of masala! It memorized me my childhood when my grandma used to cook masala in my hometown Latur. Each and every thing is so simple and relatable with village culture. Calling neighbors to help, serving sarbat, taking help from mom in law. सुंदर.आज सासूबाई पण मदतीला होत्या,छान वाटले.पाच जणांची पंगत सुंदर दिसत होती.चिकन ग्रेव्ही आकर्षक,तोंडाला पाणी सोडणारी दिसत होती.काही ठिकाणी खडे मीठ कढ ई मध्ये हलकेसे भाजून घेतात,म्हणजे त्याचा ओलसरपणा निघून जातो.बरोबर का सासूबाईंना विचारून कन्फर्म करावे.पण आजचा माहोल अप्रतिम होता.प्रेमाने काही सूचना केल्यास नाराज होऊ नये.गेल्यावरच्या कॉमेंट वर तुम्ही,, सम one liked it,,takle नाही,म्हणून हे लिहले.असो अनेक आशीर्वाद.
