Another cool project. I was thinking about the similar idea and was collecting the parts needed, but I did not have enough time to start the project. It is good to learn from your project.

what are those rubber things that hold the propeller ?

Rubbers from the days when I was making quadcopters and other RC stuff. This is damping rubbers for flight controller.

Why not use 1 propeller per axis? just let it go reverse when needed.

Reverse is slow. Also, here is small drone motors with unidirectional propellers.
