Plantains are very sweet. They just need to be ripe. When they're ripe peel then and fry them. Trust me. That's what we Caribbean people do. The green ones are good as well but for different things.

Hey Remi I am from Nigeria where west a lot of plantain and I just wanted to say that your plantain isn't ripe enough normally you have to wait till it gets yellow/brown on the outside and pink from the inside and also the skin is way easier to open
