I saw this from the start. Beccy has that real chef's spirit. She is always so calm under stress and is stern and loud, only when she needs to be. It is so impressive for such a young girl!

Being able to delegate your leadership in a position of stress to fix a situation by giving the title to someone else better suited, and more calm; therefore shows a great personality. Admitting your errors is more than half of the battle won. And she managed to retain the team together. It's perfect.

Hmm I think the temperature is high enough to evaporate the water and vaporise the remnant proteins, enzymes and microbes🤔. Temperature there is at least 180 degree celsius, don't you think so?
