The thing is, this dude is an expert cook, he’s a professional! We all know this, but if you take your steak out at 130° then you see it it’s gonna be gray. Trust me. I am literally doing the same thing right now, I take it out at 115 and then I do a quick sear.

I concur. Pull that steak at around 115-118°F. Rest it and it will carryover to 125ish. Then blast it in the pan to get a crust finishing around 130-135 for med rare.

Pull it out once it hits 115 degrees then sear 2 mins per side. Carry over temp will end around 135 degrees making it a perfect wall to wall med rare. 😋

Since most people are just d riding I’ll say it, taking it out at 130 is wrong. Why? Medium rare is 130. Typically, depending on heat expenditure, the temp will rise another 5-10 degrees. THEN while you’re searing it’ll rise. In taking it out at 130 you’re getting a medium well steak bordering well done. Take it out at 110. If you can’t get the oil hot enough then 100.

His version is fine but I season, wrap in foil, bake at 225 for 20 min. 15 minutes for a bit more rare steak.. it’s so easy and if you’re doing a lot of steaks this method makes it so easy- it gives you time and flexibility, you could prep all the steaks like I said then leave them till you want to sear them off on the grill and literally do ten steaks in 4-5 minutes.
