One thing I learned from a chocolate tasting session was how the soil changed the taste of the chocolate. We tasted the same bean from the same country but one was from a region where the made coffe and one from some kind of fruit farm. And they each tasted coffe and fruit. So the soil is very important👌.

I ended up buying a box of chocolate from Willie’s Cocoa [not the one shown, one with more citrus based flavours] & having it sent to a friend for Easter. Was great that it fitted through the letterbox so she had a great surprise when she got in from work. She loved all the wrappers & extras like the map & crib sheets. But she's still waxing lyrical about the quality & flavour of the chocolate now. She's a bit of a chocolate buff & thinks its the best tasting she's ever had & has taken her off on taste journeys like she's never experienced. So with her birthday coming up I think another selection from them is on the cards. So great call from all at Sorted for bringing it to my attention, many thanks.

As a pro pastry chef who works with chocolate in various forms... Liquid, pellet, galze, coverture, sauces, cocoa powders, etc. I like that there are more companies coming out about educating and making the chocolate experience for the average person. Here is the u.s. most people don't really get real chocolate... They get some type of sugared and altered cocoa flavor many times. Also, chocolate behaves the same way grapes for wines do. They take in the minerals, climate, soils, environment, etc. The same way wine regions have characteristics, chocolate and the cocoa plant specifically does the exact same thing. Even different batches from the same farm can vary, especially depending on when the harvest of the cacao pods occured.

I hear that, but also there's so much growth happening in the US craft and bean to bar communities - both for makers and consumers! And I even feel like we're making progress in stores with brands like Marou and Dick Taylor in more grocery stores, but I do wish things were going faster. (Then again I also remember the first NW Chocolate Festival and wow how much have things changed since then.)

@@DessertGeek I have mixed feelings and the whole craft chocolate thing... I think it's overrated to a point. Yea I get the whole single origin thing. But it doesn't mean anything if they aren't educating people on the whole process. I feel they focus way too much on being "special" but don't really teach anything. Alot of it just looks like expensive fancy chocolate, the average person still isn't really getting the full amount of information that they should.

@@pastrychefalfred876 I totally get those feelings and agree with you! And have been having those exact discussions with folks in craft chocolate media! I do think there needs to be more efforts put into education online, including as part of the chocolate purchasing process, since I don't really think we can go back to focusing primarily on in person and event education. Like there's a lot of information posted on *how* chocolate gets made, but not as much about why the chocolate costs more or why transparent trade matters. And there are plenty of higher level videos and roundtables, but not nearly enough for beginners, and it's time to fix that.

The chocolate salami reminds me of the Romanian salam de biscuiti the main difference from just looking is that the Romanian one has sweet biscuit/ cookie in the middle and it is refrigerated. Usually served around Christmas.

This reminds me of the chocolate museum I visited in Brussels, they had samples of chocolate from different origins with different cocoa percentages plus pure cocoa butter etc, really interesting!
