is commond in my country to use 2 cup of water and 1 cup of rice, but we saute the rice first with a little of oil (when is raw and until is like Opaque White), and then put the 2 cups of boiling water, we put the top lid and a toaster in the bottom (not a electric toaster obviously is more like a pan... is a "tostador de pan Chileno") and low heat until there is no more water and is perfectly cook. (sorry if my english is not very good i use google translator in some parts)

For everyone who’s wondering why we Asians use overnight rice to fry rice, it’s because overnight rice is dryer and not moist, and dryer rice will result in tastier rice

When I was younger, I always had fried rice at when we had too much leftover rice, so that's why I thought overnight/leftover rice was used. But that makes much more sense.

To be fair she didn't undercooked, she put too much water in it. And the "washing" is to change the temperature and make sure the rice doesn't clump togheter (like it would do if it were hot). She was doomed since the beggining, but this is what i call "lazy rice" and it's pretty darn common where I live.

He actually tests things, rather than just simply believing everything he was taught. I too once believed you had to use leftover rice to make fried rice, until I tried it with fresh and realised I was wrong. People think that because everyone repeats it over and over again. Like the whole 'sear the meat to seal in the juices' myth.

not really? she missed some key steps but didn’t do that bad. she should have washed the rice drained it and left it as she went to cook the eggs. this way is used in things like pilau and biryani because if you made rice like that it would be too dry when cooking it in with the sauce

All Works she didn’t use the way egg fried rice should have been made which was wrong but she just didn’t cook it enough and was only supposed to run it through cold water if it was over cooked.

1. I see people say that you put too much water if you need to drain it, but I half cook my rice, drain it, wash it, and cook it again. 2. People use leftover rice for fried rice? Why? 3. I'm shocked that she didn't put in the mandatory salt but Soy Sauce to me is absolutely disgusting and I use fried red pepper soup as sauce for my rice

@@Tea-K.1. Normally you didn't put that much water in the first place. 2. IT FUCKING DRY TO THE POINT YOU NEED MORE MOISTURIZER IN RICE!! (From oil and egg you didn't fry egg like that you put raw egg on the fucking rice!) by the way it OK to use cooked rice but it will need to fry longer to make it dry to the point of the same as leftover rice.

That chef sure seems Indian which makes her Asian, too. So all the more that I'm disappointed she cooked an Asian dish the way a British would "cook" it. I mean, is BBC that dumb or lazy to not get someone who knows how to cook an authentic dish? They should've just named the dish British fried rice if they're that lazy to even google how the true rice eaters prepare it. 😒

I came here after this video popped up through Uncle Roger (Nigel Ng). J Lou doesn't look Chinese despite the nickname "Rice Queen", but as the video progressed, she seemed more and more Chinese, until she popped some very fluent Cantonese in exclamation. I laughed very hard. Awesome. I like this.

Zerk_ Chill you only wash it with cold water IF the rice gets too cooked and you don’t want it to cook as it cooled. this is because if it’s over cooked and as it cooks whole it cools. when added to the pot the rice will crisp up as the water evaporated. that is what we don’t want. when doing it right the rice will he soft but stable and long and fluffy

I'm not defending this lady, what she did to rice is a terrible hate crime. However, you're wrong about adding garlic early. garlic will quickly burn and become acrid if cooked the same way as onions, which desire a longer cooking time. Garlic should be added late in the cooking process and cooked on medium heat for only 30 seconds to a minute.

Im pretty sure you're suppose to sauteé the garlic first then add the other ingredients so that the flavour and aroma of the garlic will be realeased and im pretty sure the garlic wont burn unless you leave the dish dry and too long on the stove

Lol no, anyone with basic culinary training would know that's not true. Garlic has to be added FIRST because the fat (oil/butter/lard) would help releasing its flavor and aroma thus making it more evenly distributed in the dish. And it's common sense that you'd start with a small/medium fire then add other ingredients right after before the garlic is burned. That is, unless you want a raw garlic flavor that's unevenly distributed. Just try to find gordon ramsay or jamie oliver's fried recipe that'd add garlic in the later step, I dare you. Please don't make factually incorrect comments like this while talking as if you really know anything about it when you clearly don't

I mean she messed up..... But she did rice the Indian way..... In india we use a lot of water and we donot use rice cookers ( have special separate utensil) then we drain the water out of the utensil and use that water to feed the cattle and to make a traditional dish called "pakhala" She is not wrong but that rice looked horrible

@@JLou0 oh hi never expected a reply from you. Yes we use rice cooker but my mom sometime use pressure cooker to cook rice. It worked the same way as in the video, but i rinse my rice first. Not after cooking. My mom will get very angry if i'm not rinse the rice first lol
