First, if you haven’t tasted nopal cactus, it’s pretty easy going as far as exotic ingredients are concerned-a little crunchy like an al dente green bean but decidedly tangier. It’s the texture that has to be wrestled with. Cacti are succulents, which means they store moisture in a way that won’t easily evaporate. Specifically, nopal cactus (aka prickly pear cactus) stores it in a mucilaginous substance that begins to leak out as soon as the cactus paddles are cut, accelerating as they are exposed to heat. If you’ve ever cooked okra any way but deep-frying, you’ve experienced this sticky (dare I say slimy) stuff.
But you can eliminate it in several ways. The most common approach in Mexico is to boil the cut up cactus in lots of water, usually with a piece of onion and a couple cloves of garlic, leaching out all that stickiness into the water. (There are quite a few cooks who advocate adding a handful of tomatillo husks to the water to help cut the mucilage, but I haven’t found it to be too effective. I’ve also heard people advocate that a little oil in the water will do the same thing.) Once tender, the nopales are rinsed until all the gunkiness is gone.
I rarely cook nopales that way because I find boiled nopales bland and, besides, they usually continue leaching baba (as the sticky stuff is called in Spanish) as they sit.
Instead, I either put them in a pan without water and cook them until all the leached out baba evaporates, or I grill the paddles whole, then cool them and cut them. With both these approaches, the sticky stuff is virtually nonexistent.
Now, about calling this a cactus salad: I doubt most of you would recognize its saladness. It’s more like pico de gallo salsa with cactus added. But then, in Mexico, any vegetable-y something on the side of a plate is considered an ensaladita.
One final comment: I’ve watched skillful cooks in Mexico boil nopales in unlined copper pots (like the ones used for cooking carnitas) or with copper coins in the water to preserve their bright green color. (Nopales, like tomatillos, customarily fade from limey-colored to olive as they cook.) As much as I’ve tried to replicate what I’ve watched them do, I haven’t been successful.

If you cook the nopales with a tomatillo husk, it really helps to cut the slime staff!

I just remembered trying the Nopales mostly because I really had been curious about them prior ... recalling the Salad Dressing was a Herby Vinegrette. Really delicious! And Happy Cinco de Mayo . My Birthdate ' is on September 16th Mexican Independence Day too . Right now making one pot Red Enchilladas and Chilli Rellano bake. With Fiesta Mexican Rice And Pintos and Cheese , Vegan. Cheers😊😊🤍💗

Takes me back to Brookline [ Boston ] ,Mass. in the 80s . Sol Azteca restaurant had a marinated cactus that was delicious .

While living in Los Angeles I was treated to a salad of nopales and thinly sliced radish. It was dressed with a cumin and lime vinegrette. It was exceptional.

Ooooh My favorite Chef Rick!! No hay como unos nopales acompañando la comida!! and they are considered very healthy to add to a dietary culinary routine. In Tucson you don't even need to go to a Mexican grocery store to find nopales. Just take a walk across your nearest vacant lot and you'll trip over a prickly pear cactus or twelve. Or cholla...

Yes, you just have to drain them. If you go to any Mexican store you can find the nopales already cleaned and cut.

He used prickly pear. That's the one you use. Just pick the young tender leaves. Don't use other cactuses because they might be poisonous.

It really doesn't take much times, plus the idea is that you have to evaporate the liquid that the nopales release, which you can't do with a covered instapot

They are so underrated. My favorite taco place also pickles them and has them as a condiment which goes so well on el pastor tacos.

Chef, I know it's a different subject, but I've had trouble with mango margaritas in past. The mango puree would be so thick ita has trouble pouring out of shaker. I'm assuming you add water to puree in blender, but not sure. Advice?

From my own point of view, you need to invest smartly, if you need the good things of life. so far i've made over $355k in raw profits from just q4 of the market from my diversified portfolio strategy and i believe anyone can do it you have the right strategy. mutual funds takes long time but investing smartly is the key for short term. Most of us tend to pay more attention to the shiniest position in the market to the cost of proper diversification.

My portfolio is very much diversified so it's not like i have a particular fund i invest in, plus i don't do that by myself. i follow the trades of Karen Gaye Gray. She is a popular broker you might have heard of. I can correctly say she's worth her salt as a financial adviser as her diversification skills are top notch, I say because i see that in her results as my portfolio grows by averages of 10 to 15% on a monthly basis. unlike i can say for my IRA which has just been trudging along, my portfolio just mirrors what she trades and not just on some particular industries of my choosing.

When it comes to investment, diversification is key. Also have my interest set on key sectors based on performance and projected growth, do not invest all your money in a particular sector, diversifying across different sectors is the way to go.

Ohh, nopales are an excellent choice. Here in México they are well known to help control cholesterol levels as well as blood sugar, they have around 3 gr of fiber per piece/cup.

you can look to see if you can find them online jarred. I have not tried them, but I hear they aren't bad. If you grow them yourself, they are the best!

I'm not a huge cactus fan, I've tried it a few times and the taste/texture don't do much for me. That being said, I put some in a white chicken/bean chili and won 1st place 🤷‍♂️

I had a bad experience with the nopales, first, they were very mushy and were more the consistency of avocados, second, there were still a lot of spikes attached.

You can also get rid of the gooey stuff by cooking them with water and a good pinch of baking soda. After they are cooked you just drain them and then fix the salad
