I saw this when it was on TV in 1995. I grabbed a post it note and wrote down the ingredients as he put them in the pan. I have been cooking this recipe ever since and my kids grew up eating it as they loved it. Whenever they visit they ask me to make it. I did change one thing. I put the raw prawns in at the very end as they tend to be a bit tough if put in so early.

Looks delicious! I typically add half tomato sauce and half stock and the cover it with foil and bake for about 20-25 minutes, checking to see if the rice is done……so good….

Nervous about putting the prawns in so early won't they get tough? perhaps peel them and put they shells and legs in and then the prawn meat near the end? But then I'm living in Ireland, not where the dish is from. Peter

I was about to say the same thing. Prawns would be well over cooked.

i cant believe this is a rick stein recipe! as a chef i cringed the whole way through this. This is not a good jambalaya recipe.
