Chef John, love your joyful commentary. First, this soup is the one. No disappointment. Worth the very small effort. The perfect bowl of comfort while stuck home with rino- virus. It is now in permanent rotation and will be my go-to chicken soup recipe to recommend.

Chef John I have been eyeballing this video for 2 weeks now and I finally got down to business today and gave it a try, roast broth and all. It is hands down, the single best chicken noodle soup I have ever had! You and your videos are classy and amazing! Keep up the great work.

My chicken just went into the oven! Really looking forward to the finished product. This looks spectacular. Both my boyfriend and I are under the weather at the moment, and I have no doubt that this soup will. Have is feeling better in no time.

I'm going to try roasting my chicken thighs before making my normal soup recipe, because I typically make fairly big batches and freeze them in pint containers. I really love all your great ideas, tips and tricks. This is one of the very best channels on all of KZfaq, for sure.

Thank you Mr. Wishes This video came to life this week again at my house. I had 2 whole organic chickens, so guess what happened next? 4L stock 2 of those litres went into the companion chicken noodle soup. Fantastic demonstration and straight-forward method. Super delicious.

@LapisGarter No! It's too strong, and doesn't contain the vinegar and trace amounts of aromatic spices found in ketchup. I need those for the aroma, so u can sense them as u sip the broth

I make this all the time, but I use a large dutch oven with a steamer/strainer basket that sits inside it. When the meat falls off the bones, I just lift out the basket, let it drain over the pot, then transfer it to a platter to cool. Then I separate out the bones from the meat. That way the broth is clear of unwanted stuff and ready to go, so I can add the rest of my ingredients. Easy peasy.

I like to keep some dark meat for the soup, as well. I basically strip every part of the chicken except the wings.

Another way to make it is to make it a 2 day process. Make the broth as directed but after straining, pour it into a 2 qt. container. Refrigerate overnight and use the fat that congeals at the top for step 2. It's more pure and much easier to remove. You''re left with pure chicken jelly which tastes wonderful when reheated and assembled into the eventual soup!

Hey, I'm not the greatest cook but I'm learning. This is why I listen to John. I have a question for anyone...what do you do with all the bits of chicken that are left over in the broth? My Mom would just make the stock and just call it SOUP! But John strained it all out to have clear broth. It makes a pretty soup, for sure. But what did he do with all that good food he strained out? (Love the eerie "horn" effect as the chicken steams, lol) Loves
