when you seal in foil you are no longer roasting,,,,,, by definition roasting requires dry heat,,,,,, sealing it creates moist heat so you are really steaming it,,, NO FOIL.... love from a professional chef. ..... put the garlic in a dish , smother in olive oil and roast until deep golden brown... your taste buds will thank you for not rushing perfection.

I always do this 180 degrees for 15 min .. I don’t cut the top just roast the whole garlic

you just like making work for yourself then.. by cutting the top off it makes it really easy to squeeze the mushy cloves out once roasted.
