To make Rosh Bora
Sugar - 1 Cup
Water - 1 1/2 Cups
Ghee - 1 Tsp
Semolina / Sooji - 1/2 Cup
Boiled Milk - 1 1/2 Cups
Cardamom Powder - 1/2 Tsp
Baking Soda
Milk Powder - 2 Tbsp
Oil For Deep Frying
Method:
1. For the sugar syrup, take sugar and water in a saucepan. Heat it.
2. Once the sugar completely dissolves, let the syrup simmer for about 5 mins to thicken a bit.
3. Turn off the stove and keep the sugar syrup aside.
4. Take ghee in a pan.
5. Add sooji rava to it and roast it for about 1-2 mins to make sure the rava is cooked and changes color.
6. Add boiled and cooled milk to the sooji and cook them both together on a medium flame until the whole becomes a nice soft mass.
7. Turn off the stove and transfer the sooji mixture into a bowl.
8. Once it cools down fully, add cardamom powder, baking soda, milk powder and mix everything well.
9. Knead it slightly until there's a pliable dough.
10. Take little portions and make patties with it. Keep the patties aside.
11. Pour sugar syrup in a serving bowl.
12. Take enough oil for deep frying in a kadai. Heat it.
13. Gently drop in the roshboras and fry them until they are golden brown in color on all sides.
14. Remove them from the kadai and put them in sugar syrup for 5-10 mins to let them absorb some sugar syrup.
15. Remove them from the sugar syrup and garnish with saffron strands along with chopped pistachios.
16. Juicy, yummy Roshboras are ready to be served.
Roshbora is a Bengali dessert made with sooji rava. This is very similar to gulab jamun, except for the base ingredients. All the ingredients used in this recipe are very basic and you can actually make these roshboras instantly, any time you want. This is a great sweet for any special occasions or you can just like that make roshboras at home and store them for a day or two to enjoy whenever needed.
