Russian Meatball Soup - Суп с Фрикадельками

This soup is very popular in Russia.
There are some different variations in recipe, but today I want to share with you my grandmother's recipe.
For Meatballs:
1.5 lb Ground Lean Beef
1 medium Vidalia (sweet) onion
1 tbsp salt
1 tbsp pepper
For the Soup base:
2 tbsp cooking oil(avocado oil)
1 medium yellow onion(chopped)
1-2 carrots(grated)
1 tbs Vegeta(soup seasoning)
2-3 tbsp Basmati rice(washed)
5 medium potatoes(Yukon gold)
Salt and Pepper to taste
1 bunch fresh parsley/fresh dill
Method:
In a mixing bowl add: ground beef,salt pepper and Vidalia onion chopped into a fine paste. Mix it well and form walnut size meatballs. Set aside.
In a large soup pot add cooking oil and saute chopped onion until slightly brown, add carrots and saute for another 2-3 minutes.
Add 4 quartz boiling water.
Add soup base and rice. Cook until rice is half way done.
Add meatballs and potatoes.
Simmer on medium heat for 30 minutes.
At the end, add fresh parsley, turn heat off, close with lid and let stand for 10 minutes.
Your soup is ready!

Simple And tasty. Here, in România , we cook it almost the same way except that we add tomatoes, celery , parsnip, paprika and lovage instead of parsley .

I liked that you used food processor for onions, something u will not easily find here on youtube. I hate cooked onion unless its processed so that i don't feel it in my mouth, the onion in the soup i can ignore :).

This recipe exists also in Italy known as "polpettine in brodo". Now i know that i made for 30 Years a Russian recipe. The only difference we use chopped garlic instead of grated onion.

@@andresstovall7300 Yes, the is a dish we make in Russia that has hot dogs in it, called Solyanka. It is made with cabbage, onions, carrots and hot dogs. Everything gets stewed together. Thank you for watching. 👍😊

You could try, only if they are not cooked. Cooked meatballs will not produce the broth you need for this soup. 😊

Rayne Yes, you can mix pork with beef, or even use chicken or turkey. I like beef for the broth it creates. 😍

No. The meatball creates the broth in the soup. If you add the eggs, broth becomes cloudy.
