This is the type of soup I imagine (in my totally fictitious version of France) being served in a tiny bistro in a small village, by the guy who owns the place and does the cooking, or his family member. And that simple soup would be so profound it would maybe be a spiritual experience. When I reach 10% of your fluency in French I’ll book the flight. That stock was delightfully gelatinous. You don’t need any fluency. Learn to say yes, no, please and thank you and whatever greeting such as good day, good bye etc. As long as you make some effort, they’re usually willing to tolerate you and are usually very welcoming.

Hi Pete, and thanks for this simple, but hearty perfection. This is also IMHO the perfect base to make, preserve, and then reanimate when you have some leftover meats that you need to have that extra dimension to. I am also a huge fan of the wafer thin homemade breads that bring that satisfying extra crunch to the dish. Bon Doodhah etc, and a Merry Xmas to you and yours and ALL HERE.
