Hainanese mooncake has a lot of ingredients in it and therefore more tedious to make. Most of the people may not know that Hainan Island produce pepper and our pepper has a special kick, hence it is not surprising that our mooncake is also peppery.
Fillings (make into 10 balls, 35g each)
- 120g cake flour
- 60g icing sugar
- 25g black sesame seeds
- 25g white sesame seeds
- 20g dried persimmon
- 10g sugar winter melon
- 30g melon seeds
- 15g walnut
- 2g salt
- 3g pepper
- 50g lard
Method
1. 120g cake flour, 5min/Varoma/SP1
2. 25g white sesame seeds, 3min/Varoma/SP1
3. 25g black sesame seeds, 3min/Varoma/SP1
4. Walnut, 5min/Varoma/SP1
5. Melon Seeds, 3min/Varoma/SP1 (my melon seeds are cooked, therefore, I don’t have to cook it again)
6. Cut dried persimmon and sugar winter melon into small pieces, mix everything well.
Water Dough (25g each)
- 150 all-purpose flour
- 20g icing sugar
- 55g lard
- 55g water
Method
1. Put all ingredients in, 30sec/SP 3 to 6
2. 3min/knead
Oil Dough (15g each)
- 120g cake flour
- 60g lard
Method
1. Put all ingredients in, 30sec/SP 3.5
Baking
1. Brush egg yolk over, at least twice and then sprinkle black sesame seeds
2. Bake 150 degrees celsius for 15min

海南酥盐月饼跟苏式椒盐月饼相似,但是里面的馅料有些不同。柿饼和冬瓜糖是肯定少不了的,胡椒粉更是不能少。很多人都不知道,胡椒是海南岛的特产,不仅是比一般的胡椒辣,味道更是顶呱呱。
馅料 (做十粒,每粒35克)
- 低筋面粉120克
- 糖粉60克
- 黑芝麻25克
- 白芝麻25克
- 柿饼20克
- 冬瓜糖10克
- 瓜子30克
- 核桃15克
- 盐2克
- 胡椒粉3克
- 猪油50克
做法
1. 炒低筋面粉, 5min/Varoma/SP1
2. 炒白芝麻, 3min/Varoma/SP1
3. 炒黑芝麻, 3min/Varoma/SP1
4. 炒核桃, 5min/Varoma/SP1
5. 炒瓜子, 3min/Varoma/SP1 (我买的瓜子是炒好的,所以视频就没拍)
6. 剪柿饼和冬瓜糖, 全都混合好。
水油面(每粒25克)
- 中筋面粉150克
- 糖粉20克
- 猪油55克
- 水55克
做法
1. 把所有的材料都放进主锅, 30sec/SP 3 to 6
2. 3min/揉面模式
酥面(每粒15克)
- 低筋面粉120克
- 猪油60克
做法
1. 所有的材料放进主锅, 30sec/SP 3.5
烘烤
1. 刷蛋黄两遍, 再洒一些黑芝麻
2. 烘烤150度, 15 分钟
