Made this a few days ago and loved it! Thanks for sharing the recipe with a video as a guide. My dough came out quite sticky and I knew it was not the right consistency thanks to your video! I was wondering, if I want to incorporate a bit of dried orange peel to the red bean paste, how and when should I do it?

Hi Ev, thanks for trying out the recipe! If you find the dough too sticky to handle, wet your hand. Another tip, I prefer to keep the dough overnight as I fins it much easier to handle. If you like to add orange peel, depending on which type. if it is 陈皮, add halfway through cooking. If it is 橘饼, no need to cook at all, just slice thinly and mix with cooked paste. For this you can refer to my Yibua video.

Lovely bagels They do look a bit overly crunchy Also i notice most people just dip boiled bagels in toppings, is there a reason you chose to do egg wash? Also i notice the cream cheese appears to have a ricotta sort of consistency Have you found novel ways to improve that?

I guess you can use rock sugar but the taste is definitely going to be different. Molasses has a deep caramelised taste and yet they are never quite sweet in comparison to regular sugar. At the same time, it gives the dish a beautiful brown color as well.

you can completely omit, some use honey but I personally prefer molasses.

海南岛很大, 每一个村都有自己的传统和口味。就像意大利面酱汁在不同的区域也是不同的做法。所以正不正宗不是以个人的口味为标准。当然,对每一个人来说,妈妈做的永远是最好的。对我来说,我的伯母做的也是做好的, 因为那是我儿时的记忆。所以,我也未必会喜欢你妈妈做的。不是你妈的问题, 只是口味不同罢了。各有各的喜欢,毫不碍事。我做了很多也卖了很多,回头的海南顾客都觉得是最正宗的,那就够了。最重要的是这个视频留给我的孩子们,让他们将来有一个参考和传承。

I would not say omit as according to my family recipe, there is no ginger. There are many types of fillings depending on which part of the island you come from. Some even only have peanut and no coconut. It is just that ginger version is a more common version in Singapore. If you like to add ginger, ginger juice can be added before peanut and sesame seeds. As in how much to add would be according to your taste.

Though it is not too thick but it should not be watery either. The custard get thickened once it is left in fridge overnight. Hope it helps.

我本身比较喜欢 30X30, 包起来比较容易。但是有时很难找到又大又好的叶子, 所以会将就在 25X25, 但是很难包, 除非你少放一点料。所以只要在25至30之间都可以。
