Mutton Pulav/ Mutton rice/easy to make non veg recipe/ mutton recipe/Special non veg recipe.
Ingredients-
Lamb /mutton- 500 gms
Basmati rice-500 gms
Sliced onions-3
Geen chillis -4
Hung curd- 200 gms
Ghee- 2 tbsp
Whole spices for temparing-
2 bay leaves, 2 geeen cardamon,1 black cardamon,1 inch cinamon stick and ½ tsp black cumin seeds
For garm masala powder-2 bay leaves, 1 tsp cumin seeds,2 tsp coriender seeds,1 tsp black cumin,1.5 tsp fennel seeds,2 black cardamon,4green cardamon,4 cloves,white pepper,10 black pepper,1 anise star, 2 inch cinamon stick and one mace.
Salt
1.5 tsp turmeric powder
3 tsp garlic /ginger paste
Method-
Soak rice for 2 hours
Marinate mutton with salt,1 tsp turmeric, 2tsp gingergarlic paste and curd for ½ an hour.
For ground masala-Roast garam masala for 2 mins on low flame in 1 sp oil.cool and grind.
Heat oil , fry onions till light brown. Keep 70 % onion aside and rest fry till crispy brown.
In same pan remove exess oil, add 2 tsp ghee, put whole spices and green chillis. Saute. add marinated mutton,fried onions and 2 tbsp ground masala.mix . cover with lid and ccok for 10 mins. After 10 mins. pour 1.5 ltr hot water . cook on low flame till mutton gets tender.add rice ,salt,2 sp garam masala powder.cook on low flame . once pulav is ready ,garnish with fried onions.serve hot with raita or slice of lime.
