Sacher Torte is one of the most famous cakes around the world. In 1832 Franz Sacher created the Sacher Torte at the court of Prince Metternich, in Vienna, Austria. It is an elegant, soft chocolate cake, filled with apricot jam and topped with a delicious chocolate glaze. It is best served alongside unsweetened whipped cream and a good coffee.

Ingredients
Makes about 12 servings
Chocolate Cake Batter
7 eggs, separated
2/3 cup (150g) butter, room temperature
1 cup (120g) powdered sugar
5 oz (150g) bittersweet chocolate, chopped
1 tsp (5g) vanilla extract
1/2 cup +1 tbsp (120g) sugar
A pinch of salt
1 1/4 cups (160g) all-purpose flour
Apricot Jam (250-300g jam)
1 pound (450g) fresh apricots, seeds removed
2/3 cup (135g) sugar
1 tbsp (15ml) lemon juice
1 tbsp (15ml) water
Chocolate Glaze
7 oz bittersweet chocolate (85% cocoa)
1 1/4 cups (250g) sugar
2/3 cup (160ml) water
Garnish
Unsweetened whipped cream
1. Preheat oven to 350F (180C). Grease with butter and dust with flour a 9 inch (23 cm) round cake pan.
2. Prepare the cake batter. In a large bowl mix the butter with powdered sugar until creamy. Add egg yolks one at a time and stir in vanilla extract.
3. Meanwhile melt the chocolate in a double boiler and add it to the yolks mixture.
4. Whip egg whites with salt until foamy. Gradually add sugar and continue whipping until soft peaks form.
5. Gently fold the whites into the chocolate mixture. Gradually incorporate sifted flour into the mixture.
6. Pour batter into the prepared pan and bake for about 45-50 minutes until a toothpick inserted into the center of the cake comes out clean.
7. Invert the cake to get a flat surface and cool completely.
8. Meanwhile prepare the apricot jam. Cut apricots in smaller pieces and place into a saucepan with sugar, water and lemon juice. Bring to a boil while stirring constantly. Simmer for about 20-30 minutes until thickens and remove from heat. Sieve to get a smooth jam. Set aside until ready to use.
9. Assembling the cake. Divide cake in two layers. Spread about half of the hot jam over the first layer. Top with the second cake layer and spread the rest of hot jam on top and sides of the cake. Let it dry for up to 30 minutes.
10. Transfer the cake over a wire rack placed on a parchment paper lined baking sheet.
11. Prepare the chocolate glaze. Add sugar and water into a saucepan. Bring to boil for about 5 minutes or until thermometer reaches 234˚F/112°C. Remove from heat, stir for several times and add chopped chocolate. Stir until smooth and shiny. If it thickens too much return it over low heat and add a few drops of water if necessary to thin it out to a runny, pourable consistency.
12. Pour the hot glaze all over the cake, starting from the edges, center. You can use the leftover glaze from the baking sheet to decorate the cake later or refrigerate for later use. Wait for few minutes and transfer the cake to a serving platter. Let the glaze dry for at least one hour at room temperature. Don’t refrigerate as it might affect the glaze.
13. Use leftover chocolate glaze for writing Sacher on top of the cake.
14. Serve alongside unsweetened whipped cream.

Just dropped in to say that this is literally the best cake I've ever eaten my whole life and I made it myself. It's better than any cake I've ever ordered in restaurants or cake shops and any one can make it at home. HIGHLY recommend it. It's amazing.

Made it on an 8 inch cake pan. Just used 6 eggs and reduced all the other ingredients in proportion to eggs used, it turned out a bit higher but so beautiful and taste amazing😍 also I'm a bit lazy to make apricot jam, so I just used store bought. I tried a lot of recipes in this channel, and will continue trying more😊 Thanks!

I made this cake yesterday and it turned out amazing... we don’t have apricots where I live, so I just used store bought apricot preserve. I found that the cake tastes a lot better on the next day. Thank you so much for the delicious recipe!

Since I've been trying to bake this cake many times but always have a problem that the cake itself is quite hard, not so puffy. I tried different ways to bake it but still have the same problem. Until days ago I started to search the recipe because I want to try again, I looked most of the video until I can see when they cut the cake if it's soft. And I found your recipe, it's easy to understand and good presentation, when I saw you cut down the cake and put the fork in, I know that this recipe is going to work. I had to make the glaze twice. The first time, the chocolate scrambled completely. The second time, I let the sugar water cool a bit more before adding the chocolate, but the first pieces still scrambled. It would have been great if you had given any advice or actual information on how to make the glaze without wasting 200 g of very expensive dark chocolate.

You bet, dear, I meant every word, too...... My husband was looking the other day at the prep. for his chocolate cake (his favorite!) and I was just not up to it ( had too much on my mind and wanted to leave it for the next day).... so I see him from the home office doing this weird 'magic' hand gestures and saying.... "Abracadabra!"..... Then he says..."Crap, it did not work, I need to try again"..... so he goes again: "Abracadabra!" I say: "Dave, what in the world are you doing???" I also had chocolate topping go lumpy,so I pit it back on heat to soften up again,then put it on cake through a sieve...it worked

Your instruction was most practical and easy to follow. It just like following from a to z and there you are, its done. Thank you. I already tried 3 different recipes and it works beautifully. One question I would like to ask. Can I use ready made apricot jam? because in this part of the world fresh apricot is not always available and if it does its pretty pricey

Going to Europe as a young person where delicious desserts were everywhere was such a joy. It’s sad that so few bakeries in the U.S. make such delectable desserts. If they did, there would be no wars and crime would plummet.

I have baked this cake as my 2nd cake in my life. I have used a 25 cm cake pan and canned apricot jam Lessons: 1. The cake was quite dry. I have used 250g of apricot jam. I would consider to up it to 300 or even 350g. 2. The cake was very sweet and there was too much glaze. After trying to even out the surface, I still ended up with a thick layer of it. Even though a lot of glaze went onto the cooking paper and has not been used. I also remind that I should have ended up using more glaze as I used 25 cm pan instead of 23 cm one. The glaze itself was very sweet. I might consider to drop glaze ingredients by 25%. But they you need to be careful to have enough to cover whole cake. Or you can just prepare to have a lot of left overs. And I would additionally drop the sugar amount by 20%. 3. The unsweetened whipped cream is not an option, it is really a part of the cake and you should use same volume as the piece of the cake. 4. It has been my first time doing any type of glaze and I did have difficulties with it, it started converting into.... some strange form of crushed hot chocolate, to heads up that it is not that easy to use the glaze. I did not have too many problems glazing the cake, but I would be better of if I did not attempt to write those letters on the cake. I would mark this cake as a solid 8/10. Very sweet, full flavored and classic. As for my personal attempt at making it 7/10.
