BEEF STEW IN RED WINE SAUCE - SALENTE CUCO
• 600 g cut of prime beef shank
• 300 g root vegetables
• 100 g onions
• 70 g tomato purée
• 300 ml red wine
• 50 g butter
• Salt
• 2 tablespoons of sugar
• Black pepper, allspice, bay leaf
• Herbs
• Rosemary and thyme
Start by evenly frying the root vegetables in oil.
When they’re golden brown, add the sliced onions and continue to sauté until golden.
Add sugar and let it caramelise slightly. Pour in the tomato purée and sauté on medium heat. Add the allspice, black pepper, and bay leaf. Finally, add the wine.
Season with salt and add the prepared beef and herbs, cover with the lid and pressure cook for 30 minutes.
Remove the cooked meat and herbs, add butter and liquidise the sauce with a hand blender. Add the sauce to the slices of meat.
Serve with rice or another side dish of your choice.
