STYRIAN-STYLE TURKEY THIGHS - SALENTE CUCO
• 600 g cut of prime beef shank
• 60 g oil
• Salt
• 50 g butter
• 800 g vegetables
• Onion, celery, peppers
• Red kuri squash, kale
• A small glass of water or stock for the sauce
• 100 g cream
Season the meat with salt and sauté from all sides until golden brown.
Add an even layer of sliced vegetables along with water or stock.
Add a little more salt plus butter, and pressure cook for 15-20 minutes (depending of the size of the thighs).
The casserole takes about 60 minutes to finish in a regular pot.
If you want to slow cook it: 5 hours in slow-cooker mode at 70-80°C.
Once the meat is tender, add double or sour cream. Decorate with chopped parsley or chives.
Serve with boiled potatoes or bread.
