Our salmon and kale stuffed pasta recipe makes for a delicious dinner party dish that’s easy to make yet impressive. Combining fresh fish, tasty Italian pasta and fresh kale, pair it with a good white wine (Booths English sparkling wine is an excellent companion) and a side of garlic bread.
We love this dish as it’s so different from a traditional salmon recipe. Salmon with kale is a well-known and loved partnership, quite often served as a cooked salmon fillet on a bed of seasoned wilted kale. In our dish, we create a stuffing from ricotta, salmon and kale. The strong, earthy flavours of wilted kale pair well with the rich salmon and creamy ricotta, complemented with a touch of zesty lemon to lift it. Stuffed into large conchiglie pasta shells, our salmon and kale pasta is then layered onto a rich creamy white wine sauce and baked in the oven for extra depth of flavour.
It’s best to use kale during its season, which is usually from October-March - at the height of the season you’ll often find local Booths Country kale available in store. A descendant of cabbage, leafy green kale can be used in a wide variety of dishes and is well known for its health benefits.
