Today, I made salmon crudo cooked salmon tataki style. I paired it with scallop ceviche, and mango ponzu that I learned a while ago from my mentor chef! I lightly cured the salmon crudo prior to searing it tataki style. This helps to firm up the texture, adds seasoning and condenses the flavor also. In this video, I show both versions, the salmon tataki and just salmon crudo sliced thin, enjoyed as it is.
Actually, this dish was put together as my co-worker generously gifted me fresh wasabi from Shizuoka Prefecture, Japan. I used a lot of it for personal consumption, but thought to at least make one recipe video using it and here it is! I hope you like it! :)
