Resep Nasi Gudeg (untuk 11 porsi)
Bahan bumbu halus:
20 siung bawang putih
15 siung bawang merah
8 butir kemiri, sangrai
6 cm lengkuas, iris
2 sdt ketumbar sangrai
1 ½ sdt lada putih butir
100 ml air
Bahan areh:
4 sdm bumbu halus
1 batang serai
3 lembar daun salam
500 ml santan
300 ml air
½ sdm gula pasir
1 sdt kaldu ayam bubuk
2 sdt garam
1 butir putih telur
60 ml air
Bahan nangka
1 kg nangka muda
1 sdm baking soda
2 liter air
1 ½ sdm garam
Bahan gudeg:
bumbu halus
6 butir telur rebus
6 buah tahu putih
1 kg ayam paha bawah
165 gr tempe
8 lembar daun salam
2 batang serai, geprek
800 ml air
150 gr gula merah warna gelap
50 ml santan
1 sdm garam
½ sdm penyedap
Pelengkap:
nasi putih
cabai rawit hijau
sambal krecek
Cara membuat :
1. Didihkan air, rebus nangka dengan garam dan baking soda selama 7 menit, tiriskan
2. Blender bawang merah, bawang putih, kemiri, lada putih dan air hingga halus
3. Sisihkan 4 sdm bumbu halus untuk areh kemudian masukkan lengkuas dan ketumbar ke dalam
sisa bumbu, haluskan kembali
4. Untuk gudeg, panaskan sedikit minyak lalu tumis bumbu hingga wangi dan mengeluarkan
minyak
5. Masukkan daun salam dan serai, tumis hingga wangi kemudian masukkan air, gula merah,
santan, garam dan penyedap, aduk rata
6. Masukkan nangka, ayam, telur, tahu dan tempe, masak di api sedang kecil selama 1 jam
7. Untuk areh, panaskan sedikit minyak kemudian tumis bumbu halus hingga wangi
8. Masukkan daun salam dan serai, tumis sesaat kemudian masukkan santan, air, gula pasir, kaldu
ayam bubuk dan garam, masak hingga mendidih
9. Campurkan putih telur dengan air lalu masukkan secara perlahan ke dalam wajan, masak sesaat
dan sisihkan
10. Sisihkan ayam, tahu, telur dan tempe ke dalam mangkuk. Masak kembali nangka selama 5 menit
11. Nasi gudeg siap disajikan

Nasi Gudeg Recipe (yield 11 servings)
Spices:
20 clove garlic
15 pc shallot
8 pc candlenut, toasted
6 cm galangal, sliced
2 tsp coriander, toasted
1.5 tsp whole white pepper
100 ml water
Areh ingredients:
4 tbsp blended spices
1 pc lemongrass
3 pc bay leaf
500 ml coconut milk
300 ml water
½ tbsp sugar
1 tsp chicken powder
2 tsp salt
1 pc egg white
60 ml water
Boiled Jackfruit ingredients:
1 kg unripe jackfruit
1 tbsp baking soda
2 liter water
1.5 tbsp salt
Gudeg ingredients:
Blended spices
6 pc boiled egg
6 pc white tofu
1 kg chicken drumstick
165 g tempeh
8 pc bay leaf
2 pc lemongrass, pounded
800 ml water
150 g dark palm sugar
50 ml coconut milk
1 tbsp salt
½ tbsp MSG
Add-ons:
Rice
Green Thai chili
Sambal Krecek
Steps:
1. Bring water to a boil. Boil the jackfruit with salt and baking soda for 7 minutes. Set aside.
2. Blend the shallots, garlic, candlenuts, white pepper, and water until smooth.
3. Set aside 4 tbsp of the blended spices to make Areh. Add galangal and coriander into the blender and blend again.
4. For the Gudeg, heat some oil and sauté the blended spices until fragrant and oily.
5. Add bay leaf and lemongrass. Sauté until fragrant, then add water, palm sugar, coconut milk, salt, and MSG. Stir well.
6. Add the jackfruit, chicken, eggs, tofu, and tempeh. Cook on low heat for 1 hour.
7. For the Areh, heat some oil and sauté the blended spices until fragrant.
8. Add bay leaf and lemongrass. Sauté for a moment, then add coconut milk, water, sugar, chicken powder, and salt. Bring to a boil.
9. Mix egg whites with water, then add into the pan slowly. Cook for a moment, then set aside.
10. Set the chicken, tofu, eggs, and tempeh into a bowl. Continue cooking the jackfruit for 5 minutes.
11. Nasi Gudeg is ready to serve.
