RECIPE
3 Oz Ground Pork RInds
8 Oz Sharp Cheddar Cheese
1lb Breakfast Sausage
2 Eggs
1) Add all ingredients to a bowl and mix by hand
2) Set an oven to 350°F and begin to ball up ½ oz balls and placing them onto a parchment lined baking sheet
3) Place into your preheated oven for 22 minutes or until golden brown
4) Let rest for 10 minutes and serve

***Carnivore Sausage Balls*** 🔹3 oz Ground Pork Rinds 🔹8 oz Sharp Cheddar Cheese - shredded 🔹1 lb Breakfast Sausage 🔹2 Eggs 1) Put all ingredients in a bowl and mix with hands until combined 2) Form into balls and place on parchment lined baking sheet 3) Cook at 350°F for 22 minutes (or longer if desired) 4) Cool at room temperature for about 10 minutes 5) Enjoy My suggestions: A) If you let the sausage warm to room temperature it mixes into the ingredients easier B) Sizing for the balls is walnut to golf ball C) Try using Italian sausage - we prefer the hot versus mild or sweet D) If by some miracle you have some left over - they freeze well E) I found cooking them on a buttered broiler pan helps to drain away the grease released from the sausage and cheese F) Freshly shredded / grated cheese works better as the pre-shredded is dryer and contains ingredients (corn starch) to keep the cheese from clumping

These look fantastic. I can imagine dozens of different variations of this recipe too. The only problem I can see is that these things would never last long enough for me to serve them to other people. I would be done with the whole tray in no time! 😂

These look fantastic and I may try something, but can we talk about the pork rinds. I'm asking seriously. In what way do you think adding pork rinds makes it better? As soon as I started doing my own cooking, I never put bread crumbs or flour into any kind of meat mixture for meatballs, meatloaf, patties or whatever. It was my understanding, bread was added to make the meal serve more people. Maybe it's because I've been doing it so long, but it doesn't seem to make any difference in taste or texture to me. What am I missing?

It just adds structure to the end product. You don't have to add anything you don't want to to anything. I'm also trying to match the original recipes to things.

So, you’re using normal sausage meat. Filled with sugar and carbohydrates (most likely 50% oat meal) to make “carnivore” sausages. Really!? Epic fail, try again👎
