Cooked a whole chicken in the crock pot yesterday. The carcass is brewing into a lovely stock with onion peelings from the freezer and other added flavorings. Chicken and dumplings with mashed potatoes and green beans last night. A large container of chicken for at least two other meals in the fridge plus leftovers from last nigh’s meal. Making the bird stretch here!

A little Italian seasoning and carrots would be good in this recipe. Replacing the rice with macaroni pasta would make this an even cheaper meal. Good eats!! 😊

I literally adapted this as my own just now. Instead of sausage,I used chicken thighs. I used my dehydrated onions and celery. I had to clean out my freezer and the chicken was looking a little rough. Almost freezer burnt but not quite there. I'll let you know how it turns out!

I am saving this video...this looked awesome and I love rice. I went shopping today and onions were from 3.99 to 5.62 a bag. The really cheap onions are 2.99 a bag...those make my eyes burn and I don't like the taste. What I have been doing is chopping my onions and freezing them. Doing the same with celery that way nine goes to waste. I am also freezing eggs. I am packaging my meat in smaller quantities. I am cutting back on how much meat I eat in a meal. I topped off my meat freezer.

My sister has been making something like that for years. She mentioned it to me 20 years ago when I started making the sausage cabbage stew and I always thought it was a version of the Spanish rice dish that uses chorizo sausage.

I absolutely LOVE these videos. I know its not technically a "food" item but the lid on the canned celery would add a cost to the meal too. I dont know how much canning lids are there but here in Australia they would be the most expensive part of the meal!! 😒

I get a lot of use from my lids- after using them for canning I then use lids on my vacuum sealed jars of dehydrated foods. That spreads the cost out for literally years. Every little bit helps🙂

We named some of Mom’s dinner inventions. One I absolutely love is fall apart chicken. It's chicken that has been slow cooked on top of the stove with onions, bell pepper and an au jus type of gravy. The chicken fell off the bone. We served it over rice. We never used thickener to make gravy because of food allergies.
