I'll show you how to make a delicious and easy vegetable pancake with ingredients you can find everywhere!
This recipe is very popular in Korea. In Korea, it's called Zucchini Jeon, and the main ingredients are zucchini and onions. My original recipe also includes squid, but many people have difficulty finding squid, so I had to modify the recipe to make it with only vegetables. It's very flavorful and crispy, so even children who don't like vegetables eat it very well, so please try it and enjoy it!
[Vegetable preparation]
1 Zucchini, about 400g
1 Onion, about 200 g (half diced, half chopped)
2 Green onions, finely chopped
1 Red pepper, seeded and sliced lengthwise into long strips
About 40g Carrots, shredded
[Vegetable Batter]
2 T Potato starch
2 T Wheat flour
2 T Water
1/2 t Salt
1/4 t MSG
1 egg
2/3 cup (140 g) Potato starch flour
Vegetable Oil
[Soy Sauce]
2 T Soy sauce
1 T Vinegar
Some green onions
[Recipe]
1. Thinly slice all prepared vegetables and place in a large bowl
2. Make a first batter and mix it with the vegetables
3. Mix in 2/3 cup of starchy flour and cook in a pan. It doesn't matter if you can see the flour, and if you don't have potato starch flour, Tempura powder will work just as well.
4. Store the finished batter in an airtight container and make into pancakes a day or two later, they taste even better.
[Cooking Tip]
1. Thinly slice vegetables for a better texture and easier to make pancakes.
2. Make sure to use medium heat to cook the pancake evenly.
3. Pancake batter stored in an airtight container tastes much better a day or two later.
4. If you look at the dough that has been refrigerated for a day or two, you will see the juice from the vegetables, but if you pour out all of it and add additional starch powder or tempura powder to the pancake, you will get a really delicious and crispy pancake (important).
4. I usually make the dough a day or two before the party and refrigerate it.
