Rewatching this and I just realized that Jeniffer was really smart for using the concept of a "bagel" in her cheesecake. Even if it was undercooked in the middle, they'd be able to remove that part when cutting out the hole of their cheesecake.

Jennifer was smart with the bagel cheesecake. The hole in the center, besides imitating a bagel also lowered the cooking time and allowed it to properly set.

My fav cheesecake is from Southern Living magazine - Fiesta Cheesecake. It's savory. Tortilla-chip based crust, no sugar, lots of cheese with the cream cheese and other spices, topped with sour cream, olives, tomatoes, cilantro, onions, peppers...we ate so much of it the year my mother made it, we couldn't eat our Thanksgiving dinner!
